The birthday celebration continues! My Dad had to work late tonight, so Ben and I had the birthday girl over for dinner.
On the menu? Chicken Soup…for the soul! (Remember those books?! I seriously had them all – HA!)
This is my Mom’s Mom’s recipe for chicken soup, which she’s passed down to me, and I thought it’d be a nice little birthday dinner for her.
I ran a knife through the long strands, cutting them into more manageable, non-face-whipping-sized pieces, then cooked them right in the chicken broth. So good!! Oh, FYI, if you’ve been reading IGE for awhile, then you know my most loathed food in the world is cooked carrots. I make only ONE exception – which is for this exact soup!
I served some Parmesan Garlic Bread on the side.
My Mom served this bread at dinner 2-3 times a week growing up. It’s just lightly buttered bread, sprinkled with parmesan cheese & garlic powder, then broiled for a couple minutes. I got a kick out of serving it to her for a change!
Oooo, it’s so chewy and buttery and cheesey. Oh, and for optimal results, you HAVE to use white bread. It’s a must.

In other news, I don’t know whether to laugh or cry about the fact that my abs and arms are sore from kneading pasta dough for 8 minutes on Saturday. I mean…really?
Seriously though, I must have been giving my A+ effort, because I am letting out audible "ow’s" from the soreness. Ok, that’s just sad. I need to hit the weight room!!!!!!
Tonight’s agenda = Gossip Girl, baby. This season is intriguing. I’m kind of hating how everyone’s just accepting the fact that Dan has a baby and, furthermore, that Serena is even pondering getting back together with him. HE’S YOUR STEP BROTHER, I want to scream! Not even former SB – CURRENT!
