While today’s skies looked innocent enough,

a "perfect storm" of wind, rain & tornadoes has been ravaging the Midwest to the East Coast all day. Wind gusts over 80mph has left destroyed homes, canceled flights,

and naked trees in its wretched wake! 8O I heard the locks on our front door rattle this morning while I was getting ready and freaked out thinking someone was trying to break in. Then I realized it was the wind rattling the entire house. Eek! Stay safe wherever you are!

In happier news, I had the perfect dinner lined up for this blustery, cold, "I just want to be cozy" day. A KILLER Sweet & Savory Roasted Vegetable Salad with Balsamic Glaze (say that 5 times fast!)

It started with the leaning tower of piza veggies!

Oh yes, my salad was packed with all my favorite, Fall, good-for-me’s. :) Once again, I’m glad I have multi sheet pans in my kitchen collection, ’cause I nearly used ‘em all to create this dish!

I started with a peeled & cubed butternut squash and sweet potato.

They were seasoned up sweetly with a drizzle of extra virgin olive oil, cinnamon & a spoonful of brown sugar.

Tossed to coat and poured onto a foil-lined, non-stick-sprayed sheet pan.

Next up is some halved brussels sprouts.

Seasoned up simply with extra virgin olive oil, garlic salt & pepper.

FYI you know you love roasted brussels sprouts a little too much when you’ve permanently burned imprints of them into your sheet pans…

I also tossed some fresh asparagus with the same seasonings as the sprouts,

and laid those babies out onto a third sheet pan.

Into a 425 degree oven! Sprouts, squash and sweet potato for 30 minutes (flipped halfway through) and asparagus for 15 minutes.

Crunchy, deeply flavorful and a texture that’s out of this world. I love ‘em straight off the pan…

alas, some crispy romaine lettuce and savory sauces had other plans!

I laid out my bed of romaine, topped with my roasted veggies then added some dashes of sweet, hot Bone Suckin’ Sauce.

THEN I added a drizzle of one of my very favorite things in the world, Balsamic Glaze.

Balsamic vinegar reduced over medium to medium-low heat until it’s thick like syrup.

Sweet enough to top ice cream, but PERFECT for my roasted veggies.

THEN I did the damned thing…I added BACON!

And your stomach will too – I am FULL!!! A few more of these roasted veggies may have made their way into my mouth during the creation of this post. ;) I can’t help myself – they’re too good!

In other news, the full moon is messing with my brain and I didn’t fall asleep until 2:30 AM last night. TWO. THIRTY. I got like 4 hours of sleep!!! I’m not exactly sure how I’m alive right now, and not even feeling that tired, but I have a feeling the crash will come soon. I shall be near my bed when it comes.

I require at least 7 hours of sleep a night, which is why I’m confused as to why I’m feeling pretty ok right now!

No, I don’t make my bed. :( I would, but the husband is usually still in it when I leave!

    Do you make the bed then in the evening? ;) Sometimes I will do that if my husband is still sleeping when I leave for work. There’s just something about climbing into a bed that’s been made. I don’t know, maybe it is just me!

    I need a good 7-8 hours to feel complete, and that is usually what I get…..and during the week when mornings are hectic the bed doesn’t get made, but on the weekends it does!

    Typically I get anywhere from 7 to 9 hours of sleep and I can pretty much go on 6 at the least, but have had to go on 5 and thats a rought day, but the night was fun:)
    I make my bed everymorning, just makes the morning feel “started” in my eyes. Didn’t grow having to do that so I don’t know where it came from…

    I think the only thing that salad would possibly be missing is a generous sprinkling of goat cheese. Mmmmmmmm.

    1) I function best on 8 hours of sleep, but can do with 7. Less than 7? You don’t want to cross paths with me…

    2) I make my best most days. But if I’m in a lazy mood, I just leave it. I think a messy bed is so tempting to lay down in and snuggle!

    I try to get 6-8 hours a night and am a real bear if I don’t get at least 6. As for making the bed- it is made every single day. My husband makes it while I am in the shower or putting gym clothes on after he lets out the dog.

    I get about 8 and love it. I would LOVE more, but my 3 year old won’t let me. I am just happy that the days of not sleeping through the night are gone. Whew!

    Does your husband eat the same thing as you or do you cook him a separate meal.

    1) 7 hours is my perfect amount, any less I’m super cranky and any more I’m kinda out of it!
    2) If The Man isn’t still in bed then yes, bed gets made!

    i need at least 6 hrs of sleep but preferably 7 1/2-9. i do better on the 1 1/2 increments (so 6, 7 1/2, or 9). 8 usually leaves me more tired than 6 unless it’s consecutive 6 hr nights (like sun and mon nights for me). early to bed tonight!

    yes i do make the bed. or more accurately, my husband makes the bed. he’s so great! we have a 2 bedroom apt with 2 bedrooms (obviously), 2 bathrooms, an entryway and then an open layout kitchen/living room/dining room. SOOOO if the bed isn’t made i can see it virtually everywhere unless the door is shut, so it gets made and makes everything feel clean :)

    I sleep like a baby….my ideal is 9 hours, as I just recently had mono. I can deal with less though, and often have to.

    I am seriously drooling over that salad. I have salad for dinner a lot, so I will have to try that!

    In an ideal world I’d get 9 hours of sleep, but I can function on at least 6. Any less than that and I start to act impaired. I never ever made by bed until this year. I think I turned thirty and decided I’m old enough to have better habits and start making it. I give it another 3 months tops. I hate it as much as I did when I was 10. :D

    I couldn’t sleep until 4:30 and had to get up at 6:30! Needless to say, 6:30 turned into 7:30 and I was racing out to get to class :P

    I’ve found that brussels sprouts just aren’t as prominent in the south as they seem to be up north and out midwest, they don’t sell them in as many places :( Going to have to try that combo of veggies when I go home for break! :)

    I’m visiting Iowa from LA, and I could not believe the wind today! All of Iowa is supposed to see a similar day tomorrow, too! Makes biking difficult… will have to leave a good workout for Thursday.

    Wow…not that is seriously a great salad. I am not sure you can post something that delicious and then not have us be able to try it in person. I mean really, that was cruel, lol!

    I rarely get enough sleep…my son is severely disabled and can’t roll over himself (not toilet trained and has no use of his hands or arms so can’t pull his sheets or blankets up) so I am up a lot at night, sometimes as often as once an hour. If I am lucky, I am only up once between 1 a.m. and 4 p.m.; some nights I am up every 1-2 hours. It is brutal. He goes to school 2 days a week so I have to be up the first time at 3:50 a.m. to start his feeding (gtube) and then again at 5:45 in addition to all the other times. He gets medications at midnight and 6 am so I am never in bed before 12:30 pm. Off to give medication now. On nights where I’ve been up a lot, I do try to get in an afternoon nap around 3:30 or I’d never make it. As for the bed, yes, I usually make it every day.

    1. I like to get at least 8 hours sleep a night.I can’t function correctly anymore,if I don’t get enough sleep.BUT…I also can’t sleep too much,because too much sleep just makes me feel more tired,for some reason.So 8-9 hours is perfect.

    2. I make our bed every morning.Our apartment is pretty small,so if the bed isn’t made,the place just looks untidy (you have to go through the bedroom to get to the bathroom).

    Perfect – shared this one with a couple of people at work – just so we could all have the same dinner sometime – lol.
    On the other side – I heard about the tornadoes and high winds and snows out in the midwest – stay safe! We’re having Florida weather – warm and steamy – in New York – at the end of October – who knew?
    Sleep – well – at this age – you’re lucky to get any! And I only make the bed if our cat wants to get up whilst we’re away.

    You won’t get burned-on brussels sprouts marks if you put a layer of aluminum foil down before you roast the veg! I use that trick every time, and it makes for such.easy.cleanup you’ll be amazed!

    oh WOW that looks wonderful!! i have a bnut squash and pie pumpkin ready to be used, and i think this might be their destiny! i get anywhere from 5-7 hours a night (i can function pretty well on just a few hours), and i try to always make my bed. as it gets closer to sheet changing time (when everything is wrinkled and pulled out), i slack!

    I heard on the radio this morning that the winds we had yesterday were the equivalent of a Category 3 Hurricane. I was seriously getting blown around yesterday while walking outside! My umbrella also turned itself inside out while walking into work and there was no way I was stopping to fix it. I’m certain I looked like a fool.

    I prefer to get at least 8 hours of sleep but obviously that doesn’t always happen. I love the feeling of a freshly made bed and have been doing it more often but I certainly don’t do it every day.

    Same thing happened to me Sunday night. 2:00 am and I was still awake. Was great on Monday – not tired at all – but yesterday late afternoon and today – I’m exhausted! I think it takes a day or two to sink in….I require 7 1/2 – 8 hrs of sleep and if I don’t get it – look out!

    Most days of the week my bed is made, but ran out of time this morning so I know I won’t like the sight when I get home of seeing it all a wreck!

    Ooo, that vegetable dish looks good, except for the BS. I just don’t like BS. I have tried.
    I need at least five hours of sleep. Anything less and I am a wreck. In a perfect world I would get seven or eight hours of sleep.
    My bed is not exactly made each day. I like to pull the sheets and covers up and smooth it out. It looks neater and is nicer to get into when I am ready for bed.
