My November article for Q Magazine came out last week in which I shared two healthy, yet satisfying, Thanksgiving recipes, and a simple strategy for having your best holiday ever!

One of the recipes was for THE most amazing pumpkin pie fake-out desserts you will EVER have in your life – Pumpkin Pie Mousse!

It is legitimately like eating a thick, fluffy, uber-rich slice of pumpkin pie, in mousse form. And here’s the BEST part – it’s guilt free and EASY!

Pumpkin Pie Mousse

Print this recipe!

Serves 6-8

Ingredients:
1 package sugar-free vanilla instant pudding
1 package sugar-free butterscotch instant pudding
2 cups skim milk
1/2 teaspoon pumpkin pie spice
15-ounce can pumpkin puree (not pumpkin pie filling)
8-ounce container fat-free whipped topping (plus more for topping)

Directions:

Whisk pudding mixes and milk in a large bowl for 2 minutes. Mixture will be very thick. Stir in pumpkin puree and pumpkin pie spice, then fold in whipped topping. Refrigerate for 30 minutes and serve!

Seriously. Like eating pumpkin pie batter – except way, way better. Plus it makes a ton of mousse so, leftovers for all! ;)

I’m bringing this dessert to Thanksgiving dinner this year, so I know I can count on a sweet ending to a fabulous feast, without the guilt – wheee! :D

In other news, tonight my Mom and I are heading out to see the most spectacular show on earth: The Radio City Rockettes!

Fun Fact: My Mom wanted to be a Rockette more then anything else in the world growing up. While she never got to strap on the silver high heels, she’s passed on her love for the high-kicking troop to me, and this will be the second time we’ve seen them live. It’s truly a spectacular show and is kicking-off (pun intended) the Christmas season for us!

What gets you into the holiday spirit? Sipping hot chocolate, wrapping presents, watching the snow fall, listening to Christmas music?

The annual Mall of America shopping trip my Mom and I go on always puts me in a cheerful, holiday mood. One of my favorite things to do at home is, after a long day of work, lay and watch tv by just the twinkling lights of the Christmas tree. So cozy!

ps: it’s not too early to start listening to Christmas music, it is?! ;)
