Well, you had to see this coming…
The step mill and I made up! It’s a love/hate relationship, you see. I love what it does for my bod, but I hate it with all my heart because it’s so friggin’ hard. Well, the love won out and we shared 20 wretched magical minutes together after a 40 minute treadmill sesh tonight. Sweat. Pouring. Sore. Good. Is that a haiku?
In other news, I whipped up a TWO step, TWO minute dinner tonight – Beef & Bean Burritos!
This is a Pioneer Woman recipe and it’s crazy easy. All you do is layer refried beans, seasoned ground beef and cheese on a flour tortilla then roll it up.
I used Trader Joe’s Fat-Free Refried Beans inside the burrito. They are FANTASTIC.

In review, step 1: layer and roll.
Step 2: Put the burritos on a plate, or in my case in an individual-sized baking dish, top with enchilada sauce and nuke for 2 minutes!
See? Two steps, two minutes!
These burritos taste exactly like the ones my Mom used to make growing up. Hearty and just GOOD. You know?
For freshness I added Tostitos Restaurant Style Salsa on top. SO glad this stuff is back on supermarket shelves!
Ben’s out with some co-workers this evening, so I made him a casserole dish of burritos topped with insane amounts of cheeeeese.
He can just pop it in the oven when he gets home!
