Nom, nom, nom. I haven’t stopped eating delicious food all day!
I spent the morning running errands – dropping off clothes at the dry cleaners (need to get that butter out of my pretty, purple dress – standard,) getting my car washed (still exciting even at 27,) tackling Costco (which wins the award for worst parking lot design in the entire city), the mall (surprisingly serene) and over to a friend’s parent’s house to pick up a bridesmaid dress!
It was at said friend’s parent’s house that I was sent home with Christmas Bread!!! Doesn’t it look like fruit cake?! Well it is, kind of.
You see, my friend’s Mom mixes whole dates, fresh cranberries and big, fat walnuts with eggs and a few other ingredients, then bakes it up into this rustic-chic treat. I feel like I want my house decorated in this loaf.
It is soooo delish too. Moist, crunchy, chewy, and simple. This is the same Mom who sent me home with those Power Cookies a few months ago – she is baker/cook/chef extraordinaire! Oh, Moms.
Lunch was just as colorful – a big Kitchen Sink Salad!
In the mix:
- Dole lettuce medley
- Broccoli slaw
- Mandarin oranges
- Dried cranberries
I drizzled Trader Joe’s Sesame Soy Ginger Vinaigrette on top and it was HEAVENLY. PS why don’t I eat mandarin oranges more often? They are so frickin’ good!
I could only find them packed in light syrup, so I strained and rinsed them with cold water before topping my salad with them. They are so juicy!
Several Christmas cookies at my parent’s house later (my Dad’s an elementary school teacher, aka he gets GOBS of chocolate, cookies and candy for every holiday – sweet!) I was home and ready to make dinner. Homemade Chicken Nuggets!!!
Here’s the thing, since my menu this week had three chicken dishes, I thawed and prepped all my chicken last Sunday, and all I had to do each night this week was take it out and cook it. Therefore tonight’s nuggets, cut from 2 large chicken breasts, were already trimmed and cut for me!
I rinsed and dried the chicken, then seasoned both sides with salt & pepper.
These guys were hand breaded, so I set up a breading station consisting of the chicken, a dish with 4 whisked egg whites,
and a dish with homemade bread crumbs!
Making homemade bread crumbs is SO easy – you NEED to try it! All I did was take a bunch of leftover dinner rolls, tore them into pieces and let them dry on a plate all day. There were a few hunks that weren’t completely dry when it was time to make the crumbs, so I baked them in the oven for a few to dry out.
Afterwards, I popped the pieces in my food processor and let ‘er rip!
At this point I could have used these crumbs to bread my chicken, but I wanted seasoned bread crumbs.
I got out salt, pepper, thyme, garlic powder and basil,
and just eyed the amounts to add in and season the crumbs up.
When everything was seasoned and processed, I put half the breadcrumbs away for another day, and added parmesan cheese to the remaining crumbs.
All you do is dip the chicken in the eggs whites, then breadcrumbs and place them onto a cookie sheet topped with a cooling rack. Give the tops a spray with non-stick cooking spray and bake at 400 degrees for 15-20 minutes.
After 15 minutes, the chicken was done, but the top wasn’t as golden brown as I would have liked, so I let the broiler brown them up for a few minutes.
They smelled so amazing!!!
Luckily they tasted even better!!!

The breadcrumbs were crunchy, cheesy and had just the right amount of flavor from all the seasonings.
I’m telling you – MAKE THESE! They are so fun to eat and definitely bring out the kid in you. Plus they’re just crazy good.
I roasted broccoli for the side. Shocking, I know.
In other news, I picked up the new Ken Follett book, Fall of Giants, at Costco today! (ps if you want cheap books – head to Costco!) He’s the guy that wrote Pillars of the Earth (seriously fans, you’ve GOT to watch the mini series!!!!!!) and World Without End that I was telling you about.
It’s about 5 interrelated families across the world and their struggles with World War I, the Russian Revolution and women’s suffrage. He’s a sensational writer – I am SO jazzed to get started!
