Hi!

Who was back at work today? I was, and the office was dead so I actually got a lot of work done. Go me! ;)

In the spirit of ridding my body of excessive amounts of holiday sugar, salt & cocktail sauce, I nourished my body today with buckets of water, fruits and vegetables, then tackled this short, but effective, 3-2-1 Interval Treadmill Routine after work. My heart was thumpin’! :D

Total: 4 miles

That’s 3 minutes running at a comfortable rate, 2 minutes where you’re slightly uncomfortable, then 1 minute at an all out sprint.

I read in SELF Magazine this weekend that incorporating intervals into your routine (aka alternating between all out sprints and running at a less strenuous speed) allows you to workout for 25% less time with the same results, than running at the same speed for the duration of your workout. Yes! :D

Said workout was downgraded a bit when I tripped on my way out of the gym. Awesome.

In other news, want to know something weird? While I don’t like anything squishy in my cookies, I rather love the raisins in Cinnamon Raisin Bagels. Riddle me that?!

I incorporated said raisin studded, cinnamon swirled bagel into tonight’s dinner of perhaps my FAVORITE griddled sandwich to date, a Grilled Sweet & Savory Breakfast Sandwich! Ahhh!!

The arrival to this idea for a sandwich is rather long. I’ll be brief. ;)

Adam on Man Vs Food was snarfing this delectable looking Bacon Egg & Cheese Burger on an episode Ben and I caught this weekend, which caused Ben to come up with the horrific idea of morphing it into a Country Fried Steak Sandwich with Bacon Egg & Cheese, which I refused to make and/or ingest.

Ben went ahead with his Frankenstein creation (which he is still slaving over as I type!!) while I took a lighter approach!

I warmed up my Griddler and popped on the bottom of a my bagel.

I liked these babies because they aren’t as big as my head. Not that I don’t like carbs as big as my head, but when it’s being combined with bacon, eggs & cheese too – I like to keep it light. ;)

Next – some syrup. The sweet part of the sandwich! Just a drizzle’l do ya’.

On goes a slice of cheddar cheese, then scrambled eggs made from 1 egg + 1 egg white + salt & pepper.

And finally, we come to the savory part of the sandwich. BACON!

Local Vande Rose Farms Artisan Dry Cured Bacon took care of it!

FYI: I watched Food Inc. this weekend and, without getting into it, I am now VERY interested in buying local meat products and organic produce. Very interested. Bleeehhhhh.

At any rate, this artisan (another word for handmade) dry cured bacon was pricey, but worth it. Nice & thick with a wonderful, peppery-sweet smell.

The bagel was spiced, soft and chewy, the cheese was melty and gooey, and the sweet syrup and salty bacon were HEAVEN.

I really wanted another one, actually, but we’re practicing self control…aka Ben used the rest of the eggs and bacon for his rendition so I’m out of ingredients… D’oh! ;)

Polished off with a citrusy orange. I’m preparing myself for the rise in orange prices to do the insanely cold temperatures in the South! Eek! 8O
