The Crock Pot Recipe He’ll Go Crazy For

I’m a realistic person, in general. I know my chances of becoming a billionaire in this life are slim to none…which is why I’ve set my sights on becoming a MEGA MILLIONAIRE instead, muwahahaha!

The Mega Millions lotto jackpot is up to an unethical amount of money right now – $330 million – so Ben and I cashed in a few dollars for some tickets to see if we could cash out big time.

Well, actually Ben got the Mega Millions jackpot tickets…I accidently got Powerball tickets thinking they were the same thing. Fail.

I’m sure the guy at the store I bought these at was laughing his rear off as I left, most likely knowing I meant to buy the Mega Millions tickets, instead of the measly $34 million jackpot Powerball ones.

I know…measly?!

Anyways, you’ll know tomorrow morning if we strike it rich. Larabars for all if we do! ;)

In other news, I had to tell Ben to pipe down during dinner tonight – he wouldn’t stop exclaiming how “bomb” it was: Crock Pot Carnitas Tacos! :D

I followed The Kitchn’s pork carnitas recipe which slow cooks pork shoulder in a unique & exotic-tasting flavor combo containing orange juice, cinnamon, cayenne pepper and peppers in adobo sauce, until it turns outrageously tender & succulent!

I’m not kidding when I say that after 8.5 hours in the crock pot – the pork roast literally shredded itself. 8O

To make my tacos, I started with a corn tortilla,

then added the shredded pork on top. (FYI I should clarify – I DO like pork, just not New Years Day pork!)

The pork has the most unique flavor – Ben was seriously spoon-drinking the cooking liquid – and the coleslaw combines cabbage with lime juice, rice vinegar and sugar which makes the perfect combo of crunchy, sweet & sour!

The tacos needed a little somethin’ somethin’ so I squeezed a lime wedge in sour cream and drizzled it on top.

Not only does Ben not like New Years Day pork, he just doesn’t love pork in general. I took a gamble on this dish (pun intended) thinking he’d like it, and he toooootally did! He was nuts for it, actually. Make it, mmkay?

Off to go stare at my lotto ticket until the drawing at 10. Wish us luck!

    Just a whole bunch of expensive clothes and shoes that I would never in a million years buy now. Or use the money to buy a private island in some exotic, water-is-clearer-than-glass location. Pretty much equal, right?

    Clothes and shoes for all of us that were purchased with a personal shopper so we would all be in classic style AND then have it all tailored to a perfect fit for each of us. What a lovely indulgence to be able to shop at those nice stores and have someone take care of us. To not have to guess and then get dressed to find a different size because my personal shopper is there to do all of that for me. How nice…

    buy a house, we are SO done living in apartments! Oh, and great living room furniture (aka. a large comfy l shaped couch…we are also a little tired of the short little love seat that we have to squish ourselves on).

    Oh my! That looks so good! I made your chicken nuggets and my husband went CRAZY for those and asked me to make them again soon! I wish I could win the lottery…but I don’t even play to tell you the truth…the odds are just too insane, seems like throwing away money ($1 isn’t so bad every so often but most people don’t stop at that, suppose that’s what makes one person so rich when someone does win, lol!). If I won though I would hire an architect and work with her/him to design my dream home (not a mansion, just a design I have in mind for a house I want to live in, but it strangely enough looks like the Cullen’s home in ‘Twilight’, lol!). We can dream, right?

    My hub and I made these yesterday – fabulous! It was a great flavor combination. Hub especially loved them commenting it was the best homemade taco in history! Tonight we are having the enchiladas. Hopefully they too will be praised with fully bellys and happy mouths. Thanks for sharing!

      Here you go!
      Zesty Slaw:

      4 tablespoons rice wine vinegar
      2 tablespoons fresh lime juice
      1 tablespoon canola oil
      1 tablespoon sugar
      1 head napa cabbage, shredded
      1/4 cup fresh cilantro leaves
      4 tablespoons freshly sliced green onions
      1 carrot, peeled and shredded
      Salt and freshly ground black pepper

      Whisk the rice wine vinegar, lime juice, canola oil, and sugar together in a small bowl.

      Add the cabbage, cilantro, green onions, and carrot to a large serving bowl and combine. Drizzle with the dressing and toss to coat. Season with salt and pepper, to taste, and serve.
