I had to get a Starby’s this afternoon just to warm up. Mmmmstarbys…
There was nowhere else I was going to go and nothing else I was going to do tonight than go straight home after work and make a hot & warming Homemade Chipotle Burrito Bowl for dinner!
Hey, when it’s too cold to make it to Chipotle, make Chipotle come to you. Yeah! Why I bet you have all the ingredients to make this bad boy at home right now.
Rice & beans? They’re pantry staples.
Seasonings? I know you know I know you’ve got ‘em.
Chicken or tofu? Everyone has at least one!
Salsa? Even if you don’t have ingredients to make fresh, I’ll bet there’s a jar in that there fridge. Go look. We’re waiting…
Ok, ready?
Now all you’ve got to do is follow these 4 simple steps.
1. Cook up some rice (brown or white – both taste great!) in chicken or veggie broth, then stir in a pat of butter, sprinkle of cilantro, dash of salt and a squeeze of fresh lime juice when it’s done.
2. Pile on black beans that have been drained & rinsed, then spiced with chili powder, cumin, oregano, cayenne pepper, a splash of the same broth you used in the rice, and nuked for 2 minutes.
3. Add tofu or chicken that’s been spiced with chili powder, garlic salt, onion powder, cumin & oregano, then cooked up real-quick-like in a hot skillet with non-stick spray.
4. Finally, top with homemade salsa, guacamole (careful with that recipe – you’ll want to eat the entire batch!) or give your bowl a sweet twist with Pineapple Pico de Gallo!

Dirty Little Secret #2: Ben and I eat our Chipotle burrito bowls with chips. Not so healthy…
Luckily tonight I was scooping with Garden of Eatin’ (cute) Red Hot Blues tortilla chips. Taste just like Doritos, but are all-natural and made with organic blue corn.
The company sent me a couple different bags of chips to try and they were so good that Ben and I demolished them before I could snap a pic…
I know – eating my fresh & healthy bowl with edible tortilla utensils kind of defeats the purpose of making a bowl instead of a burrito, but it tastes sooo good. Try it!

Somehow Ben and I stumbled upon this website last night (oh – duh – we found it on Stumbleupon) and literally almost peed our pants from laughing so hard (TMI?). It’s just screenshots of texts/conversations between people on their iPhones where auto-correct has com-pletely changed the meaning of their original message.
You’ll want to put your milk down before you get to “Gum,” that is, unless you want it shooting out your nose. You’ve been warned.

so many things i love about this post! first, i just made homemade chipotle burritos earlier this week! so good!!! second, i LOVE garden of eatin’ chips. I’ve recreated Chiplotle’s rice before and I grated a little of the lime zest into it for extra limey-ness. I’ll have to remember this recipe–it seems really easy to throw together on a busy night!

I feel in love with Chipotle’s Burrito Bowls when I was in Ohio for orientation for my distance online Master’s program…anyways, I live in NC and we don’t have Chipotle’s! Sad, I know! We have Moe’s and Salsarita’s but there’s aren’t the same…so I make my own too!

MMMMM! Made this for supper tonight – SO GOOD! I don’t get home from work until 6:30 so I put the seasoned chicken in the crock pot on low while I was home for lunch and it shredded itself by the time I got home. Then quick cooked up the rice and beans and also added some corn and salsa. AWESOME! This one’s a keeper. That rice is delish!
