Good morning!
It’s a cold, but beautiful, day here in central Iowa and I got things kickin’ with a nice, light gym sesh. 30 minutes @ 4.0 with a 5% incline on the treadmill, followed by 20 minutes on the elliptical trying to watch VH1′s Top 20 countdown.
Ummm, I saw 1 1/2 songs in 20 minutes! How on earth do they get through all 20 in an hour?!
At any rate, I was starving by the time I got home and had planned on making a nice light breakfast of oatmeal pancakes…then I remembered I had THIS in the fridge, and all plans went out the window.
Baaaaaaacon!!!!
I’ve never had strong feelings either way about bacon. Ok, that’s a lie – I freaking love bacon. Love turned into infatuation though, after I had my first slice of Vande Rose Farms’ Brown Sugar Cured Bacon.
It is UNbelievable! Thick, chewy, smoky, sweet & salty. How…I…why…I…just…I don’t even know. I love it so much!
I cooked up a couple strips and made myself a proper weekend breakfast of a Bacon, Egg & Cheese Muffin!
We’re talking buttered, toasted English Muffin,
layered with melted Wisconsin Cheddar Cheese,
topped with an oozy, sunny-side up egg,
and, x marks the spot, maple cured Iowa bacon!
O. M. G. It was seriously one of the most delicious things I have ever eaten. Cheesy, savory, saucy & chewy. Love. Love. Love. Drool. Drool. Drool.
One bite and I screamed "ohmfffmypffffgosh!" My mouth was full, you see.
There was even dippage involved. Oh yeah.
Paired with a sliced banana swimming in unsweetened vanilla almond breeze. That cancels out the bacon, I’m almost positive.
UGH that was so good! I want to do it all over again! There’s always tomorrow, I suppose…
Oh! I wanted to tell you The Social Network was sooooooo good. So good! The guy who played Mark Zuckerberg was genius. I loved learning about the inner workings of how Facebook got started. Very interesting. 2 thumbs up.
Also, that 2008 Louis Martini Cabernet was perfection. I don’t know a lot about wine, but I know what tastes good and what doesn’t – and that tasted great!!!
Ok, off to vacuum. Reason #5,420 I love living close to my parents: I can borrow their stuff. Today I’m borrowing their carpet shampooer to clean my carpets. Do know how much those things cost to rent? A lot. No thanks…I’ll just use Mom’s!
Have a great Saturday!

Breakfast sandwiches are one of my favorite breakfasts! This looks awesome!
I’m going to have to look for that bacon next time I’m back in Iowa….I miss good, quality Iowa meat!
Your dippy egg looks BOMB! THat’s my lunch!
We watched the same movie last night too (love Redbox)! Very interesting…… I am ready for a temperature increase here in central Iowa – heck, even 20 degrees would be nice right about now!
BACON!
I love bacon, but wow, can’t afford that bacon.
I know – it’s $5.99 a pack, but ever since watching Food Inc I’ve been trying to buy as much meat raised without hormones/antibiotics as I can. It’s definitely worth the splurge too!
Where do you find it? I live in Eastern Iowa and have not seen it here.
Hy-Vee!
Drool!
I stumbled upon Louis Martini and it was love @ first sip. I consider that my go-to “splurge” wine. There are so many good wines under 10 bucks these days, that I generally stick with those.
I love Saturday workouts for the Top 20 countdowns on VH1 and CMT, but I’m with you…it’s commercial, commercial, commercial, talk about what is supposedely coming up next, commercial, talk, and then mayyyyybe a song.
OK, I just ate an egg and an English muffin, but your photos make me hungry for breakfast!!
OMG. It’s so weird to think I can make a great breakfast like that any day, but I never do!
I’ve been on a huge egg/cheese sandwich kick myself lately…what is it about that combo???
Love bacon too!! Your sandwich looks unbelievably good! I haven’t seen The Social Network yet, but it’s on my list!
Yerms. Although I have an affinity for pancakes, bacon does do the trick every so often for a a hearty breakfast sandwich.
Great photos. Lovely post. Happy weekending!

I just got back from a hike and could totally go for that sandwich right now!!
Oh man, eggs inside english muffins are quite possibly the best meal ever. And local bacon to boot…yum!
oooh that breakfast looks incredible!
I make healthy egg McMuffins every Saturday for my husband. He goes nuts for them!
I loooved Social Network! The casting was so spot on. I saw it in the theater, but I cannot wait to watch it again at home! Happy Saturday!
I love a good breakfast sandwich like that. sooo good.
Wow that is my kind of breakfast! LOL! Your muffin was toasted perfectly. Do you use a toaster over or a regular ol toaster?
Just a regular toaster!
I meant toaster oven
I love egg sammies! I put a little three pepper blend on mine this weekend. It was good stuff!
I put a little three pepper hummus on my sammie. Amazing stuff.
Ummm your breakfast looks phenomenal!! That bacon looks really good too, local and no antibiotics, definite win! I agree that living close to family is awesome, my parents are like 5 minutes away and I love it
Bananas in almond milk? Guuuurl, that is so simple, I’ll have to try it!!
I just discovered your blog. I hope you don’t mind, but I copied your header and wrote an entry on my blog recommending your blog. I plan to try many of your recipes.
I live in southern Iowa and just made my first visit to Trader Joe’s about a week ago, so I enjoyed reading some of your old posts about TJ’s. Also, Gateway Market is a favorite stop for my husband me. We’ll have to check out some of the other restuarants you have written about.
You’re about the same age as our son and his wife, and they like to eat and run too. I predict they will be trying some of your great recipes, and they will be able to relate to your workout stories.
Anyway, I just wanted you to know I really like the blog. Thanks.
Brenda
fruit TOTALLY cancels out the bacon…i would even argue it turns the bacon into the equivalent of a carrot stick. just sayin’….
I’ve never seen that bacon – can you get it at Hy-Vee????
They do sell it at HV, but for some reason the one off University doesn’t have it anymore
.
Yep! I get mine at the Mills Civic HyVee!
Oh wow, I am a complete baconholic, and that looks amazing. I would love to try some of that bacon, I will keep my eye out for it when I visit KC next weekend.
We have a local butcher who cures his own bacon, it’s yummy but more smoky than sweet, I love bacon that has a bit of sweetness to it.
Is there a reason you often use unsweetened vanilla almond breeze vs. milk? I’ve read a bit about it, but I’ve never tried it.
[...] yes, I made these same suckers on Saturday morning (and was this close to making one on Sunday too) – I’m just crazy for [...]
