Super Fruit Salad

Super Fruit Salad is full of awesome fresh, juicy fruit and antioxidants, as well as baked tofu and toasted almonds for protein!

Ben said his favorite thing about being married to a food blogger is all the shipments of food I get in the mail to sample. Not because he also gets to try all the goodies – no – he gets excited when a big brown box appears on the front porch because he gets to play with what the food’s usually packed in.

Dry Ice.

Because he gets to play MAD SCIENTIST – muwahahaHAHAHAHA!!!

That is pure joy on that man’s face. Pure, unadulterated joy. It certainly never gets boring around here! ;)

ps I cannot WAIT to show you what was inside that box!!!!

In other news, I made the most EPIC salad since my Roasted Vegetable Salad with Balsamic Glaze last Fall. Super Fruit Salad!

This baby was huge. HUGE! It was inspired by this Superfruit Berry Vinaigrette salad dressing Wish-Bone sent me to try!

The ingredient list is great and includes the juices of grape, cherry, raspberry, pomegranate, cranberry and blueberry. Nice.

I took some inspiration from the ingredients and loaded my salad with sweet & juicy fruits & berries! I started with a giant bowl of mixed greens, then topped them with strawberries,

blueberries, pomegranate arils,

(thanks Trader Joe’s!)

mango and baked tofu seasoned with garlic salt, olive oil and pepper.

I sprinkled the sky-high salad with almonds that I toasted real quick in a skillet with non-stick spray. Makes ALL the difference in its flavor!

Can I eat it yet??

How about now?!?!

Best Salad Ever!!

The dressing was slightly sweet – only slightly. Ben hates sweet food when it should be savory, and even he LOVED this. It was the perfect enhancement to all the sweet flavors in the salad. Refreshing & revitalizing!

That’s just feel good food, no?

I must eat everything all mixed together. My favorite salads are “chop” style where everything is chopped tiny and I can get a little bit of everything in each bite. Yummmm!

  2. Tiffany 04.01.2011

I like to mix it all in BUT the best is when everything is gone and the leftover toppings are at the bottom of the bowl soaking in the juices and dressing! YUM!

  3. Nicole 04.01.2011

    For sure all mixed in!

  4. Beth 04.01.2011

Mmmmm…..salad toppings. See the difficult thing is that I am a picker…ice cream loaded with candy or cookies, I pick out the good and usually allow the ice cream to melt. Rainbow chip icing….yep, pick out the rainbow chips and eat a bit of the icing. So, I usually eat my salad the same way, unfortunately. I mix it all together, then pick out the yummy tomatoes and cucumbers and red onions or strawberries, or whatever else I’ve added. So….best way to eat the toppings on my salad? Mix and pretend I’m gonna eat it all, but really pick out the goodies!

  5. Kate 04.01.2011

Definitely all mixed in where you get bits of different flavor in every bite! But the bits of topping in the bottom are always a nice way to finish things off! Yes, I seem to always finish to the last bite!!! :-)

  6. AlisonP 04.01.2011

I am a mix it all in sort of girl. I like to make the perfect bite of salad by picking out the right bits of lettuce and toppings to make it scrumptious every time! :)

  7. Langley 04.01.2011

I love to get as many different toppings as possible on my fork, that way when I take a bite, I can taste each ingredient together. So good! I didnt even know Wishbone had a dressing like this! YuM

  8. catherine j 04.01.2011

  12. I have to mix my whole salad up. I want a bit of everything in each and every bite.

  13. I like to mix them all in. I’m sort of neurotic about eating everything at an even pace so that I don’t have a bunch of one thing left over at the end :)

  14. Kristi 04.01.2011

I like to mix them all in.

i mix my salad toppings in. hate them just sitting on top!

  21. Carrie 04.01.2011

I absolutely mix it all up, but then end up eating all the toppings out because I love them too much. So I usually end up with some soggy salad and dressing and no pieces of egg to be found. YUM!

  22. Liz 04.01.2011

    Definitely eat the toppings first!

  23. Evelyn 04.01.2011

Mixed in — unless my daughter is nearby and takes the croutons!

  24. My favorite way to eat my salad toppings in throughout the salad eating process… I usually make sure there is enough goat cheese to last all the way through ;) YUM!

I like to have a little bit of everything in every bite. I don’t like to mix the whole thing together though because then the small stuff ends up on the bottom.

  26. I like to get a little bit in each bite, but I leave most of it to eat at the end. I love switching to a spoon and scooping up all of the good stuff from the bottom of the bowl!

  36. Love everything mixed together in my salad–more flavor and texture! Also can’t be a salad without the dressing ;)

  37. Joan 04.01.2011

    Save them for last!!

  38. Jen 04.01.2011

All mixed together but I seem to pick out things to “save for later” – haha!

  39. Maranda 04.01.2011

I have to mix them all in, otherwise I would easily eat them all right away, and then I would be left with only lettuce at the end (and that is just no fun at all)!!

  40. Chris 04.01.2011

Mix them all in – though I also save some of my favorites to eat last :)

  41. Christi 04.01.2011

Depends on the day! Some times I like to mix them all in, other days I eat them one kind at a time (if they’re bigger) & other days I eat them first! Such a rebel, I know! ;)
