The anticipation is killing me, but Ben’s as cool as a cucumber, snoozing his little heart out on the couch! Pshht!
Ugh, I wish I was a napper.
We’ve been doing our best to fill the day with activities to keep from looking at the clock, including having lunch at my parent’s house this afternoon. Not just any lunch, though – a birthday lunch!

My Mom whipped up a light and seriously yummy meal to celebrate – Feta Chicken with Artichoke Salsa.
This recipe of hers is one of my absolute favorites because it’s both healthy AND exploding with flavor. She simply seasons chicken breasts with salt, pepper & garlic powder, then bakes them with feta cheese on top.
Then she places them on a bed of spinach and lays out a bunch of toppings for everyone to add. I opted for tons of artichoke salsa, roasted asparagus, fresh tomatoes and Italian dressing!
Enjoyed with a lovely bowl of sweet strawberries on the side.
After lunch we had our requisite IGE family birthday cake – Pepperidge Farms Layer Cake – MY FAVORITE THING EVER!
Trust me, there’s a reason why we have frozen cake for everyone’s birthday in my family…
I’m glad we have the excuse too, because this cake is so dang good. Fluffy, sweet and the frosting is TO DIE.
Finn can’t have cake (allergies – poor baby!) so he munched on a special cookie so he could celebrate too.
He got so excited that he tried to shove the whole thing in his mouth at once.

Ok – I’m officially down to T-minus 1 hour until we head to the airport. My techy brother rigged up my iPhone so I can plug it into my computer and use the Internet from the phone (my hotel was going to charge like $15/a day!) so I WILL be blogging from Vegas!

Are you a good traveler?
Traveling is the #2 thing I love most in the world, second to my husband and family, but I gotta tell you – getting there kind of stinks! I tend to get antsy on road trips and can’t remember the last time I flew without something going wrong (hello Detroit and Paris!) That said, I don’t have a fear of flying or anything like that!


































Hope you have a great trip, my sis lives there, (military). She really enjoys Vegas, but avoids the “touristy” places
She’s been there, done that! And today we are celebrating my husbands birthday too! Love the blog as always, your nephew is too adorable!

i think half the fun is getting there! i like airports and flying and enjoying an in flight bevie or two! the anticipation build up going there is just the best. although I’ll admit i get antsy on long flights or when delays happen! and coming home always sucks.

I remember the day before we left for Vegas, I was so excited, I rocked out to Kesha as loud as I could and then did shots with Toly to calm us down. LoL, although I think it only fueled our excitement more.

I’m the same! I love going places but I hate getting there! I’m going to Vienna in July but I am already seriously dreading the flight.
I’m a pretty good traveler, the only thing I’m not good at with traveling is packing… I tend to WAY over pack!

Have an absolute blast in Vegas! I am a pretty good traveler, but I just realized this past spring break that I’m developing mild motion sickness – like, not puke-y, just massively ridiculous headaches. Hope you fare better than I!

I’m just like you, I get total ants in my pants before traveling. It’s so annoying for my co-workers if I have to spend time in the office before a flight… It’s like I drank 6 cups of coffee and ate an entire shelf of candy!
I’m a grrrrreat traveler….of course those who I have traveled with might not agree! ha! I knew that was a Pepperidge Farm cake with the very first party photo! SO GOOD! I like the coconut cake the best! Amazing how a store bought frozen cake can be so delish! =)) Hope you are having lots-o-fun in Vegas! If I were there with you guys, we would all be thumbing a cab to the “Pawn Stars” shop! I think the actual business is called Silver & Gold….but not sure. I’ll bet the cabbie could get us there, no problem!
For some reason I really love flying! I like to be in the airport with my book and a snack, I like to be wandering around with my cute carry-on…I like the adventure and excitement and the people watching… My husband, on the other hand, gets very anxious- not about flying, but about how he’s sure they’ll lose our luggage again, or we’re not going to make it through customs in time to catch our next flight, etc…. We balance each other out I guess!
