Remember that thing I used to do where I donned sweat-wicking clothes, then quickly put one foot in front of the other on a rotating and/or outside surface? What was that called again?
Oh right, RUNNING.
After nearly an entire month of traveling then catching up, traveling then catching up, traveling then catching up – I am officially HOME for the foreseeable future, and SO ready to get back on a schedule that includes exercising regularly!
Sure, I’ve fit in the occasional jog here and evening walk there, but I honestly don’t think I’ve been on a standard "hit the gym/trail 3-4 days a week" routine since Vegas. Vegas! Well, the buck stops here – rather, it stopped tonight – as I immediately changed into my best ninja-inspired workout clothes (read: all black) and hit the trail for a 3 mile run after work!
It was slow going, but not impossible, and the beautiful weather made it easy to get back out there. I am soooo ready to keep going and get my weekly mileage back up. I guess distance does make the heart grow fonder!
I couldn’t bear to part with the sunshine when I got back, so Ben and I fired up the grill and threw the flank steak that had been marinating in the fridge for a few hours on the fire, and made Steak Salads for dinner!
Oh yes, the luscious flank steak. My favorite quick-cooking steak that’s as tender as can be when marinated in Stacy’s Marinade for a few hours, grilled for 2 minutes a side on super-high heat, then sliced into whisper-thin strips…

After assembling our salads, we headed back outside to christen our back deck with the first outside supper of the summer. 8)

They were fantastic, you’ve GOT to try that flank steak marinade, but beware – too many beef ribbons MAY cause husbands to lay face-down on the floor with a bad case of the beef sweats. OMG I cannot stop laughing!!!
Memorial Day is this weekend which usually signifies the official kick-off of grilling season, which is actually perfect timing because my Iowa Burger recipe was published the other day! I updated the original post with the recipe, complete with an easy-print feature. Hope you enjoy!
With that, I am off to enjoy a chopped mango for dessert. They have been so perfect lately, and seem to do a good job of satisfying my sweet tooth.
Ok, if a few chocolate chips happen to find their way from the pantry into my mouth later on, I wouldn’t hate it…
