Remember that thing I used to do where I donned sweat-wicking clothes, then quickly put one foot in front of the other on a rotating and/or outside surface? What was that called again?
Oh right, RUNNING.
After nearly an entire month of traveling then catching up, traveling then catching up, traveling then catching up – I am officially HOME for the foreseeable future, and SO ready to get back on a schedule that includes exercising regularly!
Sure, I’ve fit in the occasional jog here and evening walk there, but I honestly don’t think I’ve been on a standard "hit the gym/trail 3-4 days a week" routine since Vegas. Vegas! Well, the buck stops here – rather, it stopped tonight – as I immediately changed into my best ninja-inspired workout clothes (read: all black) and hit the trail for a 3 mile run after work!
It was slow going, but not impossible, and the beautiful weather made it easy to get back out there. I am soooo ready to keep going and get my weekly mileage back up. I guess distance does make the heart grow fonder!
I couldn’t bear to part with the sunshine when I got back, so Ben and I fired up the grill and threw the flank steak that had been marinating in the fridge for a few hours on the fire, and made Steak Salads for dinner!
Oh yes, the luscious flank steak. My favorite quick-cooking steak that’s as tender as can be when marinated in Stacy’s Marinade for a few hours, grilled for 2 minutes a side on super-high heat, then sliced into whisper-thin strips…

The tender, savory beef ribbons flank steak slices were placed on a bed of cold, crisp lettuce, then surrounded by veggies on all sides.
Let’s see, what do we have here…steamed asparagus,
steamed broccoli,
crisp cucumber, dried cranberries,
and the most BEAUTIFUL sliced tomatoes!

After assembling our salads, we headed back outside to christen our back deck with the first outside supper of the summer. 8)

They were fantastic, you’ve GOT to try that flank steak marinade, but beware – too many beef ribbons MAY cause husbands to lay face-down on the floor with a bad case of the beef sweats. OMG I cannot stop laughing!!!

Memorial Day is this weekend which usually signifies the official kick-off of grilling season, which is actually perfect timing because my Iowa Burger recipe was published the other day! I updated the original post with the recipe, complete with an easy-print feature. Hope you enjoy!
With that, I am off to enjoy a chopped mango for dessert. They have been so perfect lately, and seem to do a good job of satisfying my sweet tooth.
Ok, if a few chocolate chips happen to find their way from the pantry into my mouth later on, I wouldn’t hate it…

I am the grill master in my house–although I’m also a coward, so I make my husband light the coals for me. We use charcoal & have yet to fire up our grill yet this year…This weekend for sure!
This flank steak recipe sounds delicious and we love to grill out and we are broadening our horizons into the steak category! I was wondering if you could post the proportions of the marinade. I didn’t see them in the link. We live in WDM too and I love your website and recipe/cooking ideas!

I love grilling!!! Grilled salmon is my favorite main, and I LOVE grilled peaches so carmelized on top and gooey and warm… I kind of want one now actually ahhahaa

I love colorful dinners like that! They are always so appealing to me – especially sweet toppings (ie dried fruit) on salad! So good.

That salad is making my mouth water, even though it’s only breakfast! I love grilling…well I mean, I love eating grilled food. I’m not really very good at it so I leave it to the men. Here in NYC, since I can’t have a grill, I pull out my Foreman and go to town. I make some gooood grilled fruit!

I like steak but really should not eat it for health reasons. Just like wine, but I cheat sometimes. I mean how bad can it be right? I mean look at Ben!
I love to grill chicken. I always pound it out to make it perfectly even and it cooks to perfection. The trick with any grilled meat is to 1) leave it alone 2) let it rest before eating for at least 5 minutes.

I just made the recipe you have on your blog strawberry jam. About how long would you say you stir the straw, gelatin, and water mixture before it starts to boil and you turn it down to a simmer? It’s in the refrigerator right now. I can’t wait to try it tomorrow morning!
PLEASE post a how-to for grilled peaches! That sounds amazing and I bet they would be so good as a topping for something savory like grilled chicken!
