PIZZA
Remember when pizza parties were the absolute ish in elementary school? Like, you and your classmates went completely bananas when you earned one for reading 1,000,000 books, or something?
Nowadays, isn’t it funny that you feel the same way when your boss buys pizza for the whole team as a reward for a job well done? Like, you would literally do anything for that evil man if he just keeps buying you pizza?
Pizza just seems to make every situation infinitely better no matter your age, and I’ve got good news – make it at home just got a whooooole lot easier.
Say it with me…PITA PIZZAS!
Making a personal pizza on pita bread takes legit, 10 minutes from start to finish. I know. Tonight I topped a Trader Joe’s Whole Wheat Pita round with homemade tomato sauce (just leftover tomato sauce seasoned with garlic powder, onion powder, pepper, dried oregano and fresh basil,)
artichoke hearts, (these were frozen-then-thawed hearts from Trader Joe’s – AHmazing. I will never buy canned again!)
shredded colby jack cheese,
black olives,
sundried tomatoes and fresh basil.
A quick trip to a 425 degree oven for 8 minutes rendered my personal pita pizza hot, cheesy and drool inducing. GULP!
The absolute perfect bite!
To which I let out an audible "MMMMM…" after taking. Then got embarrassed for myself because I was all alone in the house.
This miiiiight be the most awesome thing I’ve made in weeks, which proooobably means I should go make another…

The most awesome thing that happened to me today was I got to try a new (to me) self-serve-and-top fro yo place in town – Yo2Go! Can you say twisted Bavarian Cheesecake & Mango fro yo with nearly all the kiddie cereal on the planet, PLUS chocolate chip cookie dough pieces on top?! OH YES I DID!





























The most awesome thing that happened to me today was that every blog post I read (and I had some catching up to do) motivated me to do something. I’m now off to treat my brother to dinner at his favorite resaurant

Ok, why has it not occurred to me to make these before? Hello?? I am totally making these this month! My kids will love them and the best part? We each get to choose our own toppings! Thanks for the idea!
Those pizzas look yummy, I am def trying the breakfast ones you posted. My mom makes pizzas on the grill. She makes her pizza dough like normal then small personal sized pizzas. She cooks one side on med for a few mins, takes them off, puts cooked side up on heavy duty pan, put toppings on cooked side and return to grill to finish cooking. I bet it would work with the pita pizzas too so you don’t have to turn the oven on in the house.
