    very silent saturday..haha! no words! I love forever 21′s necklaces-I seriously go there specifically for them, I bought a robot one last week. I was awake for a total of about 35 hours so I was out like a a horse around 9 and woke up around noon today..ha. So not really anything-I re-created myfitnesspal.com website and just getting my blog up and atom for monday. :) excited to get back on track with my weightloss journey. :)

    Your Saturday looks fab! My husband, dog and I went for a looooong walk around a lake today, and then came home and crashed all afternoon. Oops! Now time to be productive!

    Try some Eggplant Parmesan. Take a few pieces of whole grain braid (no need to dry bread to make bread crumbs in a food processor), stick it in a food processor with some parmesan, salt, pepper, and italian herbs, blend till fine. Pan fry those suckers after putting them through the egg wash method of coating the eggplant with the bread crumbs. Cook until golden brown. Pour in some Gino’s marinara (because you are always talking about that brand, so you’ll like it), and top with a couple slices of fresh mozzarella cheese. Serve when cheese is melted with or without whole grain pasta.

    Speaking of pasta, have you eve tried the squid ink pasta that you can find at Hy-Vee? It’s either found with all the other pasta or in the bakery, in long 1.5 ft. bags. It’s amazing.

    My favorite way to eat eggplant is to slice about 1/2-3/4in thick lengthwise, sprinkle w/evoo, salt and pepper. Throw it on the grill and enjoy!

    Eggplant Parmesan. I had a fantastic version of it at a restaurant recently, w/ panko breading and goat cheese between layers of the eggplant & marinara sauce, nom nom. If you could recreate I’d be much obliged.

    I’m sure it was fried though; when I make my version I just use normal breading and I bake the breaded parmesan for 10 minute before assembling the layers. Healthy and good…but not quite so tasty.

    Ahh wish I would have made it to the market today.

    I like grilled eggplant the best cut lengthwise or in circles. Its also great roasted and thrown on pizza. :)

    Slice the eggplant in one inch thickness, brush each slice with olive oil and season with salt and pepper. Grill.

    We even dice them up and put them in a tin foil bag and put on the grill.

    Love the great dane at the Farmers Market… I’m a sucker for big dogs!

    Forever21 has some of the best jewelry b/c of the price alone! I also love John 3:16 printed on the bottom of every sack — when I first noticed that little (powerful!) verse, I decided to support Forever21 even more!

    One question — was there no papusa eating?

    I ended up hanging out with my best friend, cooking lunch together (fresh pasta and salad), drinking coffee, and just talking— it was perfect!!

    I don’t use eggplant often as it makes me mouth itch :( Probably allergic but I do love it in lasagna, which you don’t see often. I think it’s great to slice it thin, season it, roast it, and then use it as a layer instead of pasta mid dish.

    Yum, just made eggplant tonight in a veggie dish. Sauteed eggplant, mushrooms, and zucchini in a little bit of EVOO, dash of balsamic vin and garlic. Also seasoned with Cavatelli’s Greek Seasoning. My new favorite seasoning! Great on meat, veggies, etc! You must try!

    Beautiful produce pictures… looks like a perfect day!
    Eggplant method– I slice it then sprinkle salt on it… lay them out and let some of the moisture come out. Blot with a paper towel…. I have been layering that with squash and zucchini (sliced the same) and tomatoes (or tom sauce) in a pan (sorta like lasagna) and baking it on 350 for 20-25 minutes… got some basil? Throw it on there too with some nutmeg and red pepper flakes!

    I’ve made baingan bharta (an Indian eggplant dish) twice in the last week, using the recipe from Manjula’s Kitchen . A few things I did: used cumin seeds (not powder); substituted a can of tomatoes (because it’s what I had at home); and omitted the asafetida. It’s super yummy!

    Sorry, eggplant is the only veggie I don’t eat unless it’s totally disguised in a dish. The rest of the farmers’ mkt pics are great. We went to a local orchard for yellow freestone peaches and some great apples related to Honeycrisp, called Zestar.

    My boyfriend and I went to the Bite of Oregon today which is a giant yearly food festival on the waterfront. So much fun! Great wine and beer gardens and a local Iron Chef competition.

    My fave way to cook eggplant is on the George Foreman grill. Really! Slice it up and throw it on, so good!

    Missed your wittiness, but still got a good idea of your day from those awesome pics. Looks like some great Farmer’s Market finds! I didn’t get to go yesterday- was a bridesmaid for a wedding at Toad Valley. <3 The only time I've tried to cook eggplant was eggplant parm. It was okay- but my Ben wasn't a fan- he prefers it with chicken. :) The recipe I tried said to "drain" the eggplant after putting salt on it, but that didn't really work out for me. Good luck- can't wait to see what you do!

    Had too many mimosas and slept all afternoon. ;) Sometimes you gotta have days like that.

    I miss the DSM farmer’s market so much! Needless to say, the produce in the middle of the desert doesn’t compare. Eggplant – grill it with some garlic oil! It’s too hot for chili here but I like it diced up and thrown into chili at the last minute too..

    I have a recipe with roasted eggplant (and some other veggies) in a balsamic sauce that is mixed with some type of grain – quinoa, couscous, etc. Love it!

    The way my family has always eaten eggplant: slice about 1/2 inch thick then dip in beaten egg and then in breadcrumbs and place in pan with hot olive oil (maybe a little butter for flavor), once brown flip and top with cheese and a big slice of tomato. Once the cheese is melted it’s done!

    mmmm – I watch carbs – so I vote for eggplant – slice it lengthwise – cut the skin off each slice – soak in a salt brine for 1/2 hour (takes the bitterness out) – dip in egg and parm/romano cheese mix. – let dry on a cooling rack – now – here’s the kick – you can pan fry those suckers up OR – bake ‘em – and then proceed with eggplant parm -
