Triple Orange, Avocado & Shrimp Salad with Lemon Poppyseed Dressing

Triple Orange, Avocado & Shrimp Salad with Lemon Poppyseed Dressing is a colorful, flavorful, filling salad.

I haven’t been this excited to photograph a recipe since…Cornbread Topped Chili in a jar, maybe?

Tonight after workin’ it in the gym, then pushing myself through 12 minutes of torture the Day 1 Week 2 workout, I assembled what might be the most colorful dish that’s ever graced my kitchen table.

A Triple Orange, Avocado & Shrimp Salad with Lemon Poppyseed Dressing!

This weekend I found myself with three (three!) types of oranges, and planned this dinner with some other fixins’ tout de suite. The different oranges turned out to be all different colors, which made this salad as colorful as it was delicious. A feast for the eyes and the soul.

I started the salad by cutting off the peels of the different kinds of oranges, then cutting just the segments out.

First up were blood oranges. All my life I’ve wanted to try a blood orange, and what do I see when I walk into Target on Saturday? An entire case of ’em. I couldn’t believe my eyes!

These ruby-red beauties look nothing like their navel counterparts, but taste the exact same. It’s so wild.

A navel orange and Cara Cara orange joined the citrus lineup next. I’d never had a Cara Cara orange, but I found big bags of them on sale at Trader Joe’s on Sunday (I ran a lot of errands this weekend…) and decided, what the heck. I’m so glad I did because their pretty pink color is absolutely adorable, plus they’re sweeter than regular navel oranges which you know I love.

On top of the salad were buttery avocado slices, and a generous sprinkle of hot pink pomegranate seeds. Tomorrow I’ll show you how to easily get them out of the pomegranate.

Studding the salad were sauteed jumbo shrimp, added for staying power.

All I did was saute fresh shrimp in a hot skillet in non-stick spray for 3-4 minutes a side, until they were curled and pink.

This Weber Seafood Seasoning I used was awesome with all the sweet flavors in the salad.

Finally, I drizzled on a homemade Lemon Poppyseed Vinaigrette and called it a day!

  17. Dream Mom 01.24.2012

Wow, so pretty! I’ve always been a bit intimidated by a pomegrante so I look forward to tomorrow’s post. I am anxious to try the lemon poppy seed salad dressing. I love that it’s scaled down-so many of the salad dressing recipes are way too large.

Does Ben eat this for dinner too or does he want more? My husband tends to balk if there is too much salad and not enough protein, lol.

  18. I also just discovered Cara Cara oranges. I only bought one, ate it, and promptly went back to the store the next day to buy more :) SO GOOD!

  19. What a beautiful dinner! And I love the mix of carbs, proteins, and healthy fats. It’ll definitely be making an appearance in my rotation in the near future!

    • Gloria 01.25.2012

What is pinterest? I haven’t heard of that.

  22. I can’t wait to see what your method for de-seeding a pomegranate is. I posted about this same thing on my blog last week and there was some debate on different methods. :-)

  23. Gloria 01.25.2012

This looks so pretty!! I have only tried a pomegranate once I also can’t wait to see your method. Mine was tricky.

  24. That looks delicious! I was on a kick of sweet salad for about 2 months and they all included pomegranate seeds! I’m back into savory salads now, but I’m bookmarking this one for when the urge for a sweet salad reemerges!

  31. Bonnie 01.25.2012

I love blood oranges, but haven’t been able to get any in the States that have the taste that we grew accustomed to when living in Europe- much sweeter and juicier than our navel oranges. Gorgeous to the eye, though, always… Glad you lucked out with a good one, but hopefully you’ll find one that blows you away one day :)

  32. Marissa 01.25.2012

That salad looks divine! I just made a similar grapefruit/orange/avocado/arugula salad via Everyday Food and it was delicious. I’ll definitely try yours too.

  33. This makes me want a salad right now!

  34. Margaret 01.25.2012

Just a tip, in case you aren’t aware: The oranges at Hy-Vee that are labeled Moro oranges are blood oranges.

  35. Francesca 01.25.2012

Amazingly Beautiful and I can almost taste how wonderful it will be. I will be making this!

  36. Cate 01.25.2012

Okay, next time you go to Europe, if you make it to Switzerland, look in the local grocery stores for blood orange juice. Actual blood oranges don’t taste much different to me than regular oranges, but OH MY HEAVENS, blood orange JUICE is amazing. And of course I have no way of getting my hands on it other than going back to Switzerland. :(

  37. Gorgeous indeed! Loved the color of all the fruit…but that perfect looking avocado really stuck to me.

Planning to try your lemon poppy seed dressing – always in need of something new to jazz up salads and I just can’t find a bottled one I like that well.

  39. I just made your “Superfood Salad” last night (with a couple of changes to use ingredients I had on hand) – it was awesome! The leftovers were even better today for lunch! Great recipe and this one looks like another MUST-TRY!

  40. Leah 01.25.2012

I need to move to Iowa. The ONLY oranges they sell at my local store are navel. I would love to have more variety.

Made this salad this past weekend, it was great! I couldnt find any blood oranges so I just settled for regular navel oranges and added some mango and grilled a slice of pineapple. So good! Love the way the colors popped. Everyone enjoyed it. Thanks a bunch.
