Raise your hand if you’re working this week!
Ok good me too. It’s weird with the 4th of July landing on a Wednesday this year though. I mean holiday weeks are usually fluff weeks anyways, but landing right smack dab in the middle, July 4th?! How are we supposed to get anything done around here?
Further adding to my distraction is the fact that I’ll be turning 29 on Thursday. Freaking. Out. Not so much about the fact that I’m getting older – well, no, definitely freaking out about the fact that I’m getting older – but also about the fact that I’ll be saying goodbye forever to my 20s in just over a year. They were so fun and carefree. Ugh.
I hope when I’m 40 for example, and onto bigger and better things, I’ll be able to look back and call my 20s amateur hour – but right now, eesh, it’s really freakin’ me out. Anyways, pizza is helping. Waikiki Pizza. It’s AWESOME, actually.
After failing fishing on Saturday, Ben and I didn’t feel like going home just yet, so we stopped off at Mullets on the way home to cool off and chow down on some of the awesome grub they got goin’ on at that place.
In addition to the copious amounts of mullet photographs on the walls, Mullets is also known for their delectable pizzas. The Waikiki Pizza, featuring a sweet chili sauce with pineapple, bacon, Canadian bacon, and mozzarella cheese, immediately caught our eye.
We couldn’t wait to try the slightly spicy take on a Hawaiian Pizza – Ben’s faaavorite - and it did not disappoint.
Washed down with a cold beer, it instantly energized us to go home and…fall asleep on the couch.
Recreating the pizza at home proved to be super simple, and honestly tasted exactly like the Mullet version!
BAHAHAHA. I can’t even…
Anyways.
Start by combining equal parts of your favorite BBQ sauce and sweet chili sauce, then slather it over whole-wheat pita pockets.
Top with pineapple chunks, thinly sliced red onions, Canadian bacon, cooked bacon, and shredded mozzarella cheese.
Bake for 15 minutes at 350, and dinner is served!
Waikiki Pizza
Serves 2
Ingredients:
2 whole-wheat pita pockets (or flat bread)
3 Tablespoons BBQ sauce
3 Tablespoons sweet chili sauce
1/4 small red onion, thinly sliced
1 small can pineapple chunks in natural juices, drained
2 slices Canadian bacon, chopped
3 slices bacon, cooked and crumbled
1 cup shredded mozzarella cheese
Directions:
Preheat oven to 350 degrees. Combine BBQ sauce and sweet chili sauce in a small bowl then spread over pita pockets. Top with red onion slices, pineapple chunks, Canadian bacon, cooked bacon, and cheese. Bake for 15 minutes, or until cheese is fully melted.
Slightly spicy from the sweet chili sauce and red onions, perfectly salty from the bacon, and just the right amount of sweet from the BBQ sauce and pineapple. This was a mouthwatering combo of flavors!
No mullets required, neither.

What has been your favorite age so far?
I’d say 24. Part of the year I was whooping it up with my friends in Minneapolis, the other half I was a newlywed with a new home and husband!

We don’t have plans for the July 4 holiday, but it’s cool that I have a two, two-day work weeks! I plan to hit the bike trail on my day off, if I can take the heat!
July 4th on Wednesday definitely feels a bit odd. We’re planning to hit up a Brewers game & otherwise stay inside since we’re under a heat advisory until Friday at 10PM.
24 was a good party year for me & I gained a lot of independence but it was a weird time in my relationship with my now hubby. This first year of marriage (age 27-28) has been pretty great, but I’m thinking 29 is going to be my year to shine, since I plan on being 29 for the rest of my birthdays.

Now you’re making me freak out – I turn 30 in October! Eek! I hadn’t really thought much about it to this point but I too will be saying bye to my 20′s.
Recipe looks great, no Canadian bacon for me though. Pineapple is my all-time favorite pizza topping!
I turn 29 in a month and I’m feeling the exact same way! I can’t even think about my birthday the following year yet :/ I’d say my favorite age was 25, probably because I felt like a real adult at that age, while being young too. For my first couple birthdays after my 25th I called them my first anniversary of my 25th bday, my second anniversary of my 25th bday……
I think I need that sweet chili sauce in my life…and the pizza!
This is SUCH a weird week. I have to work Monday & Thursday. That’s it. Weird.
I’m loving life right now at 25. Married life at 21 was a great time too. Ahh….
I will chime in for the over 30 crowd…I would say my 30′s were nice, but hectic with the kids. Now in my 40′s (almost 50–YIKES!), I am enjoying the freedom of being an empty nester. Now I am ready for some FUN

Happy early birthday! don’t fear the 30′s. I’m 36 and they have been some of my best years! “they” say the 30′s are great because you have confidence and knowledge by that point. it’s true – things just keep getting better. i enjoy your blog – thanks for sharing your perspective.
30 for sure. My 20′s were awesome, but I turned 30 in January and we had our first baby in April. Greatest thing I’ve done yet.
My 30′s were SO much better than my 20′s! And, one year in, my 40′s are topping my 30′s! I think it just keeps getting better!!!
I’m 36, and I can say each year is better than the next. The 20s seem so long ago! I’m sure when I’m in my 40s that I’ll be thinking what a baby I still was in my 30s, and so on. I definitely prefer the 30s over the 20s.
I just turned 30 and I promise it’s not that bad. Really it feels pretty similar to 29 and 28.
My favorite age so far, believe it or not, is right now, age 64. I just retired and am enjoying spending time with my husband and grandchildren. I like to think I’m a little wiser these days, and my feathers don’t get ruffled as easily as they used to.
By the way, I’m really enjoying your blog, Kristin. The recipes are great, and your enthusiasm for everything is catching. I always look forward to reading about your latest adventure.
Pita pizzas are the best! I’ll have to show this recipe to my dad because a.) he loves sweet chili sauce and b.) he (and my mom) LOVES Hawaii, and they go often, even to Waikiki
I just turned 21 in May, and so far it’s turning out to be a fun age
Yum yum yum. My boyfriend and I do this with naan and put it on the grill. So tasty and much more fun than delivery pizza!
I had an epiphany was I 29 – 30 isn’t old. I always thought it was, but as I was nearing it, I realized I was still me and 30 wasn’t going to change that or make me old.
I’d say my favorite age was 18. After graduation I still lived at home but my parents didn’t care where I went/what I did. I worked part-time, had no bills, and absolute freedom. Then I packed up and moved across the country to marry my high school sweetheart. No longer carefree but certainly an adventure!
PS – You couldn’t pay me undo the person I am and the knowledge I have now at 32 to go back to the freedom I had the summer I was 18!
My college years were fun, but I really do think it just keeps getting better and better. 25 was pretty good, I’ll be 26 in August and I’m looking forward to it!

I am 41 and I will tell you that your 20′s are only the beginning of life getting good. I think I am the oldest person that reads your blog and I LOVE it!!!
I became a Mom at 34 and that was the best part of my life. To look back now at 41 knowing I have a great hubby of 15 yrs and great kids, that is priceless. So enjoy turning 29, because it only gets better!
I’ll be 29 on the 17th! Ahhhh! I’ll freak out with ya, fellow July baby! I am feeling the exact same way. Nobody can understand why I’m freaking out, but it’s just going to be so hard to say goodbye to my 20′s! Haha I think 21 was a really good year. My last year of college which was even more of a blast than the previous three, I could officially go to bars, and I lost 30 pounds. I was just overall in a good place

Sounds yummy! Where do you find the Frank’s Sweet Chili Sauce??? I am a big fan of Frank’s Hot Sauce and Wing Sauce, but I haven’t seen the Sweet Chili… that’s a must try!!

Happy almost-birthday! i had my big 2-9 a couple months ago, and honestly, im still not over it! But, I hear 33 is considered the BEST age of all, so at least that’s something to look forward too!
I love the idea of the smaller, personal sized pizza with the pita breads… my newest thing is to grill pizza… will this recipe grill well?
This pizza is basically all of my favorite things: bacon, BBQ sauce, pineapple, and cheese. Looks so delicious!
I like to say that I’m “36 and a few months”. When I hit my 30s, I felt like I was doing great at work, with my kids, with my marriage and with my friends. It just seemed to all come together then. Now that I’m almost “59 and a half”, I’m really excited to retire soon and work on all those things I’ve wanted to do instead of what I needed to do.
I turned 29 on June 14, it’s not so bad. We look so young! HECK! I still have acne! You have done and accomplished SO MUCH MORE than I have! You should feel very happy! Next year, I’m making it my goal to go to NYC and being on the Today Show for my 30th! I just don’t feel 29 in the least!
