Well I made it my entire pregnancy without having a single food aversion, just to find myself on the other side of baby skeeved out by all things thick and creamy a la yogurt, bananas, and peanut butter. Aka all my favorite breakfast staples!
I don’t even want to try ice cream yet for fear that it too will gross me out, leaving me scarred from the stuff for an extended period of time, which just won’t do. Mama loves her Blizzards too much for that to happen.
PS: it’s only a matter of time before Pumpkin Pie Blizzards make an appearance – whee!
That being said I’ve had to think outside the box when it comes to breakfasts lately. Cereal’s good, fruit’s ok, and CLIF bars will do in a pinch, but I really need something with girth (girth!) to get me going and fueled for a morning of taking care of Lincoln. That’s where Baked Blueberry Almond Oatmeal Bars come in.
Hearty oatmeal, sweet dried blueberries, crunchy almonds, and whole flax seeds form the base of these incredibly easy baked breakfast bars that are filling and not to mention fast. I truly never knew how quickly one needs to eat/shower/exist when you’ve got a newborn! These handheld bars are perfect to scarf down with a crunchy apple first thing in the morning and call it a day.
More fluffy and muffin-like in texture, than crunchy like a granola bar, the blueberry/almond combo is really yummy. Bake these babies up then keep ‘em in the fridge for a few days to grab and go in the mornings, or individually wrap in saran wrap and freeze to make sure breakfast is always handy.
Start by combining 1-1/2 cups old fashioned oatmeal and 1/2 cup dried blueberries in a large bowl.
Psst! I found these dried blueberries at Target for CHEAP! Dried blueberries are always so expensive, I feel.
Next add 1/2 cup chopped raw almonds, 1/4 cup brown sugar (un-pictured) and 1/4 cup flax seeds. Flax seeds are extremely healthy, full of Omega-3s, and are great for lowering cholesterol. Look for them in your grocery store’s bulk bins!
Spice the mixture up with 1 teaspoon salt and 1/2 teaspoon cinnamon then stir the mixture up.
Finally add the wet ingredients including 1-1/4 cups milk (I used unsweetened vanilla almond breeze), 1 whisked egg, and 1 teaspoon vanilla.
Give the mixture another big stir then pour into a nonstick-sprayed 8×8 baking dish and bake for 25-30 minutes in a 350 degree oven.
Cool completely then slice into bars (or triangles because I suck at planning) and enjoy!
Baked Blueberry Almond Oatmeal Bars
Makes 8 bars

1-1/2 cups old fashioned oats
1/2 cup chopped raw almonds
1/2 cup dried blueberries
1/4 cup flax seeds
1/4 cup brown sugar
1 teaspoon salt
1/2 teaspoon cinnamon
1-1/4 cups milk (I used unsweetened vanilla almond milk)
1 egg, whisked
1 teaspoon vanilla
- Preheat oven to 350 degrees. Stir together oats, almonds, blueberries, flax seeds, brown sugar, salt, and cinnamon in a large bowl. Add milk, egg, and vanilla then stir to combine. Pour mixture into a nonstick-sprayed 8×8 baking dish then bake for 25-30 minutes, or until toothpick inserted into the center comes our clean. Cool completely then cut into bars/triangles and store in the refrigerator for 2-3 days, or individually wrap in saran wrap and freeze. Microwave to reheat.
Mmm! Pillowy and packed with great textures and flavors, have fun with these!
In other news, we survived our first restaurant outing post-baby! Yesterday Ben worked from home so we snuck out to grab a quick lunch at one of our favorite nearby restaurants (which also happens to be one of the fastest!) – Monterrey.
After a few pleasedontwakeup, pleasedontwakeup prayers, our little guy stayed conked out the entire meal. Sweet! It was so nice to get out with Ben. The first family outing had to happen sometime so you might as well rip the bandaid off early!
Regarding more baby/family posts, I’m thinking about starting a baby channel here on IGE. That way the people who are interested in those types of posts can read them, and the people who aren’t, won’t see them coming through the main feed. Like I said, my goal and intent is to keep this a food/cooking blog, but Motherhood is a big part of my life now, and I’m interested in writing about it!
