Lately Lincoln and I have been able to catch up with a few friends we haven’t seen in awhile, and after saying hello we’ll inevitably ask each other, “how’s your summer going?!”

I’d like to turn the question on you, too! How’s YOUR summer going?!

Ours is going great! Ridiculously fast, but great. We’ve been busy chipping away at our Summer Bucket List but I swear for each item crossed off the list, we find a new item to add, and when asked to recount what we’ve been doing with our days it’s hard to say. They’re all blurring together at this point!

A few trips to the pool and library, lots of park visits, and zipping through any and all fountains we can find (Lincoln is capital O-bsessed.) No matter what we fill our mornings and afternoons with though, the little man and I have a standing date with the front porch and two homemade popsicles each night. I tell you what, I have more pictures of a half naked 2 year old with popsicle-stained lips than I know what to do with!

Strawberry Coconut Water Lemonade popsicles have been one of our favorites, and watermelon blended with strawberries and apple juice were a hit too. None as delicious as our latest creation though, Pineapple Coconut Mint Popsicles – the ultimate antidote to this sweltering summer heat!

It’s been scorching hot here and the inspiration for this simple, 3-ingredient, sugar-free popsicle recipe was born from a porch sitting, icy cold mojito and/or pina colada (or glass of sauvignon blanc, if we’re being real) sipping fantasy I’ve been having lately. As I imagined kicking up my heels and enjoying a non-preggo, adults-only summer bev, the idea to combine then turn them into virgin popsicles popped into my mind, and these frosty treats could not have turned out ANY better.

Like I said, just three ingredients – fresh pineapple, coconut milk, and fresh mint – are blended then frozen in popsicle molds. Crazy refreshing (these would be great for a spa day/party!) naturally sweetened, cold, creamy and a great way to treat yourself with ZERO guilt.

Like I said, this has been one of Lincoln’s and my favorite homemade popsicle creations yet, plus my Dad gave it two thumbs up whilst enjoying one with us after staining our back deck last week. Porch moments, homemade popsicles, family, and 2 year olds running around in their underwear (yes, we are that family!) – it doesn’t get more summer than that!

Start by chopping 2 cups fresh pineapple, which is about 1/2 medium-sized pineapple. I look for pineapple that are more yellow vs green, indicating they’re juicy, ripe, and sweet.

First slice off the top and bottom of the pineapple with a sharp knife, then trim off the tough rind.

Next, slice the pineapple in half while it’s still standing up, and then slice each half in half so you have quarters. Lay each quarter on its side then slice the core out, slice the cored quarter into planks, and then chop into bites. Truly, processing a pineapple is a cinch once you’ve done one or two. The trick is using a good, SHARP knife.

Add the chopped pineapple to a blender (I’ve got a Blendtec,) with 8oz light unsweetened coconut milk. I wanted to keep these popsicles really light and refreshing so I used light coconut milk, but if you can only find full-fat – go for it!

Finally add 2 Tablespoons lightly packed mint leaves to the blender. FYI, those aren’t my baby hands – my trusty kitchen helper measured and poured everything for me!

Trust me, kids who help make…EAT! (Although homemade popsicles never require much convincing!)

Place the lid on top of the blender then blend until very smooth. My pineapple was extremely sweet so I didn’t need to add any additional sweetener. If yours could use a little somethin’ somethin’, add powdered sugar or honey to taste.

Last step is to pour the mixture into popsicle molds – you’ll need 8 total – then freeze. My Mom gave us these molds, but I just ordered these and can’t wait for them to arrive!

Ingredients
  

  • 2 cups chopped fresh pineapple
  • 8 oz light unsweetened canned coconut milk
  • 2 Tablespoons lightly packed mint leaves

Instructions
 

  • Add ingredients into a blender then blend until smooth.
  • Pour into popsicles molds then freeze until solid.

Notes

  • Look for pineapples that are more yellow than green which indicates the pineapple is ripe and sweet. You can also pull on a frond from the top of the pineapple to see if it's ripe. If the frond comes out easily, the pineapple is ripe.
  • If you need to add sweetener, I suggest powdered sugar or honey to taste.
