Superfood Salad with Lemon Vinaigrette combines ultra-healthy and flavorful ingredients like quinoa, pomegranate, citrus, avocado and beans, in a light-yet-filling meal, that’s bursting with satisfying flavors and textures. Eat by itself, or topped with shrimp or grilled chicken.

Gluten-Free Superfood Salad with Lemon Vinaigrette combines ultra-healthy and flavorful ingredients in a light-yet-filling meal.


  • 1/2 cup dry quinoa
  • 1/3 cup red onion, chopped
  • 1 orange, peeled then segmented
  • 1 avocado, chopped
  • 1 cup canned black beans, rinsed and drained
  • 1 cup pomegranate seeds (about 1 pomegranate worth)
  • 1 cup frozen corn, thawed
  • 1/3 cup chopped fresh cilantro
  • salt and pepper
  • For the Lemon Vinaigrette:
    • 1/4 cup fresh lemon juice (about 2 lemons worth)
    • 2 garlic cloves, microplaned or finely minced
    • 1 teaspoon agave nectar or honey
    • salt and pepper
    • 6 Tablespoons extra virgin olive oil


  1. Cook quinoa according to package directions then set aside to cool.
  2. For the Lemon Vinaigrette: combine all ingredients in a jar with a tight fitting lid or bowl then shake or whisk to combine.
  3. Combine cooled quinoa with red onion, orange segments, avocado, beans, pomegranate arils, corn, cilantro, salt and pepper in a large bowl. Pour Lemon Vinaigrette over salad then stir to combine. Serve cold or at room temperature.

    WOW! I found this on pinterest and made it tonight. The only change I made was using pomegranate craisins (1/2 cup) because my grocery didn’t have any fesh. Both my husband and I loved it topped with grilled shrimp. All i can say is well played! :)

    This recipe is amazing! So delicious and took no time at all.

    Substituted limes for lemons and doubled the avocado and cilantro. Used 5T instead of 6 for olive oil.

    I made this tonight for dinner with a few changes (added dried cranberries, chicken, red chard, and asparagus; didn’t add the oranges or pomegranates; cooked the corn, asparagus, red chard, and corn) and it was amazing! Very flavorful!

    Made this last night – it is SOOOOOOOOOOOOOOOOOOOOOO delicious I cannot even believe it!! Definitely the best quinoa dish I’ve ever made.
    I made a few modifications – used way more quinoa (1.5 cups) so that it’d be more quinoa-y and less salad-y, added tofu, and omitted the olive oil and salt – just mixed the other dressing ingredients right in with everything else. DELICIOUS! Thanks :)

    Yummy! I did have to salt my serving (I’m not quite THAT healthy yet!) and it totally brought all the flavors to life! Loved it with shrimp but anxious to try the leftovers with chicken! I also took the advice of another reviewer and served it over a bed of spinach. If not, I think it would be too oily.

    I made this last night for my family and we all loved it. I changed it a bit by adding lentils and tomatoes. No pomegranates at the store this week so I had to leave those out. I also didn’t use the entire vinaigrette and no shrimp since we are eating vegetarian. This is a great dish. See my write up on Thanks!!
