You guys, we totally caved!
It was just too cold in our house last night, so we bit the bullet and turned the thermostat back up to 71. We are wimps, I know, but decided that it was worth the extra $20-$30/month to be cozy and be able to feel our fingertips inside the house.
What can we say, we like the heat!
We like Greek Yogurt Parfaits for breakfast, too!
I used Chobani Pomegranate Greek Yogurt as my base,
14g of protein!
Mixed in 1/2 Tablespoon of chia seeds to make the thick Greek yogurt even thicker, topped with some fresh pineapple and kiwi,
then added some Wild Berry Trail Mix on top!
This mix is super – it’s got whole almonds, pumpkin seeds, sunflower seeds, dried cranberries and dried blueberries, among other things. I heart dried blueberries – they’re so cute, and have such a unique chew. Have you ever tried dried blueberries? They cost an arm and a leg, so I’m glad they were included in this mix!
Between the pomegranate yogurt, kiwi and pineapple – this was TANG-Y!
But in a good way.
Extremely fresh, tropical and just what I need to face another day with 6 feet of snow on the ground.
I am totally looking forward to lunch – Tuna Salad & Yogurt (not together!)
Last week I saw a recipe for Tuna Salad on Lauren’s blog and, it looked so simple yet flavorful, I knew I had to recreate it. In the mix:
- 1 can tuna packed in water, drained
- 1/2 container plain Greek yogurt
- Carrots
- Pickle
- Capers
- Lemon
- Dijon mustard
- Salt & pepper
Add everything to taste and mix. Print this recipe!
I snuck a couple spoonfuls as I was packing this up for today’s lunch – WOW – it is SO delish! Fresh, clean and tangy – and NO mayo. The perfect tuna salad!
Packed to go over some spinach and dried cranberries. Hmmm, it appears that just as I can’t to go a day without almonds or almond butter, I can’t seem to go a day without dried cranberries. They just add so much flavor to anything and everything!
Rounding out lunch is a new flavor (to me) of AE fat-free yogurt – Orange Pomegranate. Yurm! I’ve had a couple people ask me about this brand of yogurt. It’s made locally so I’m not sure how far out of the Midwest it’s sold. Anyone?
So I’ve been thinking a lot about weddings lately. Ben and I’s 2 year wedding anniversary is coming up in just over a month (craaaaazy!) and I just found out that my Great Aunt & Uncle have the same anniversary as us (crazier!!) Tell me,
What’s your favorite part about weddings?
I love the vows. They’re so special and I love seeing two people say them to each other, for some reason! I also LOVE a good wedding reception, and of course, THE CAKE!!
