Hey, hey – happy Wednesday to ya!
This morning I worked out when I woke up! I warmed up with the standard 1.5 mile Mom walk, then ran the same course 2 additional times. GOSH that route is hard to run! It’s super hilly and great for walking when I tend to want a more challenging course, but holy moly it is tough to run. It’s good for the abs (and buns!) though – they are always sore after running hills – yes!
Per my insane hunger levels last time I worked out in the morning, I loaded up on breakfast with a Bacon, Egg & Cheese English Muffin!
No greasy, nastiness here though. I used a whole wheat English Muffin, some center-cut, low-sodium bacon and 3 egg whites!
Seriously – nothing is tastier and more satisfying than this combo of flavors. Nothing, I tell you!
I also had a sliced White Peach:
And some sweet, mouth-watering Cantaloupe.
I ate my cantaloupe very slowly because this is seriously the best one I’ve ever had. It’s definitely cantaloupe season, my friends – stock up while you still can!
For lunch I was feeling a little saucy, so I packed a Fiesta Salad.
In the mix:
- Mixed greens
- Black beans
- Baby corn
- Dried cranberries
- Taco seasoned shredded cheese
- Salsa + a dallop of ranch dressing
I had really wanted some fresh tomatoes for this baby, but I didn’t have any on hand. Dried cranberries make a nice sub though, right?
I also packed a banana – because they’re not just for oatmeal…you know?
I’m thinking I met my fruit quota for the day…what do you think?!
So, you guys, I’m very excited for tonight, because tonight = dinner + pedicures (not at the same time) with my Mom! Yep, it’s ladies night!
