The Salad Bar that Keeps on Giving

Breakfast was outstanding this morning!

Cheese in a ‘loupe! Doesn’t quite have the ring of oats in a ‘loupe, does it? ;)

We’re talking creamy cottage cheese, stuffed inside a seeded cantaloupe half, then filled the rest of the way up with luscious berries, leftover from my salad bar extravaganzaaaa.

This is a wonderful breakfast for me because, not only does it satisfy my preference for a sweeter breakfast, but it’s packed with protein from the cottage cheese, which will hopefully keep me full for hours.

It’s a fact that I prefer my cottage cheese paired with sweeter items like pineapple and berries. How about you?

Oh, ha, actually…my roommate and I had a brief, yet hot, love affair with Taco Doritos dipped in cottage cheese in college, but have since moved on from that tragic phase in our lives. ;)

Love this breakfast!

Just call it the salad bar that keeps on giving, because I brought MORE extra berries for lunch to pair with a new (to me) yogurt from Cultural Revolution!

I’ve seen this yogurt many times at my local grocery store, but never bought it because it’s usually $1.65+ for a cup. Uhhhm, no. This week, though, they were 10/$10, so I decided to give them a whirl!

This European-style, organic yogurt has 1/3 less sugar than other yogurts and, in true Euro style, is much thinner than it’s American and Greek counterparts. Plus it’s made in Kalona, IA!! Sweet!

I think I’ll pour it over my berries.

I also brought a bagel thin smeared with crunchy roasted flaxseed almond butter.

It’s also a fact that I like crunchy almond butter better then crunchy peanut butter because of the different crunch that almonds have. It’s more of a shatter-type crunch, vs the chewy-crunch of a peanut. Does that make sense?!

At any rate, I made this as a snack a couple nights ago, and it was dy-no-mite.

I wanted to follow up on a couple things I owe you!

Kashi Lemongrass Coconut Chicken review: Lemony, with a surprising hint of lime and bite from jalapeno. LOVED the pilaf/quinoa base and chicken, which both helped keep me full all afternoon. Would definitely buy again.

Iowa Glasses: Many of you have asked where I got my Iowa glasses from! I actually got a set of them as a gift, but you can order directly from the makers at Cat Studio. They’ve got a TON of products representing different states, cities, regions & countries!

Laura Bush Memoirs: I adore getting lost in a fictional mystery thriller, or period piece – full of exciting and wildly descriptive text. Laura’s memoirs, however, are different. It’s simply a woman telling the story of her life, in a way that makes you feel like she’s talking to you as a friend. Regardless of your political views, this is a fantastic read.

Oookie dokie, time to hit the road – happy hump day! (wahoo, I just thought it was only Tuesday!)

See ya’!

Ahhh, I woke up to the sound of the rain this morning. A gentle thunderstorm, actually! It started coming down here around 7pm last night and hasn’t really stopped since! Morning Mom walk was canceled, but the extra sleep to the soothing rain didn’t hurt. After Ben and I ate…
