TGIF and TGIHTDO (thank goodness I have the day off!)
It’s true – Ben is heading to Nebraska this afternoon to go to the Nebraska vs Oklahoma football game tomorrow, so I took the day off to keep him company before he goes! I know…the sacrifices I make…
I sliced up a BIG Honeycrisp Apple sprinkled with Cinnamon to eat while watching the Today Show this morning.
One of my favorite things to do when I have the day off is sleep in a little and then watch the Today Show. It just says “day off” to me!
I am actually stuffed right now…this Honeycrisp was seriously half the size of my head!!
Oh, a couple of people have asked how big the baking dishes are that I make my baked oatmeal in. Here they are compared to a can of beans.
I believe the dish on the right was part of a Corningware set we got for our wedding, and the dish on the right was part of a Rachel Ray “cooking for 2″ set. This set would be similar.
Since it’s just Ben and I in the house, it’s nice to have these smaller dishes to make personal sized casseroles and such. Cute!
They also work perfectly for:

- Baked Apple Pie Oatmeal
- Baked Banana Bread Oatmeal

Agenda for day off:
- Gym sesh with Ben
- Help fertilize lawn for the winter (well, mostly just watch)
- Maaaaaaaybe bake?!
- Get outside – it’s supposed to be 70 degrees today, wheee!
