Nuts for Twinkie Donuts!

I was struck by the most spectacular idea as my Mom and I were walking around Bed, Bath & Beyond this afternoon. The proverbial light bulb above my head started ding-ding-dinging!

What if, just what if, I injected a batch of baked donuts with whipped cream and called them…Twinkie Donuts??? Muwahahahha! I got to work as soon as I got home!

First I baked up a batch of donuts using the recipe that came with my baked donuts pan:

Wilton Baked Donuts

Ingredients:

2 cups cake flour (I used all-purpose)

3/4 cup sugar

1 teaspoon salt

2 teaspoons baking powder

1/4 teaspoon nutmeg

2 eggs

3/4 cup buttermilk

2 Tablespoons melted butter, cooled slightly

1 teaspoon vanilla

Directions:

Preheat oven to 425. Sift flour, sugar, salt, baking powder and nutmeg into a large bowl. Whisk eggs, buttermilk, butter and vanilla in a separate bowl, then add to dry ingredients. Stir until just combined, then pipe batter into a donut pan, filling molds 2/3 of the way full. Bake for 7-9 minutes, or until tops have set. Remove immediately to a cooling rack. Makes 12 donuts.

Turning these plain baked donuts into Twinkie Donuts takes two measly steps. First, flip your completely cooled donut over,

and get our your can o’ Reddi Wip!

(insert mandatory squirt here…)

Stick the entire tip of the reddi wip can into the bottom of the donut and slowly press to release the whip.

You can feel the donut expanding as it fills with sweet, yummy, cream!

Bahahahaha! I started laughing hysterically when I cracked the first one open. It seriously looks like the real thing!! Much less "indefinite shelf life" tasting though. ;) Loved ‘em!

One tip – squirt the cream in right before you serve these babies, otherwise it’ll just disappear into the donut. Other than that – have fun. :mrgreen:

Afterwards I tackled some cardio in the form of scrubbing my kitchen from top to bottom then played Oregon Trail online (I know), where I lost my Dad (Keith) on the first river crossing. I didn’t know whether to laugh or cry!

Note to self: Rather than foolishly forging ahead, float your covered wagon over the 4 foot deep river crossing!

Sooo that was my afternoon… ;)

I was semi full of Twinkie Donuts when dinner time came around, so I whipped up a light pasta dish, using random ingredients I found in my fridge and pantry.

While some corkscrew pasta cooked away, I sautéed chopped asparagus in non-stick cooking spray with salt & pepper, then added chopped artichoke hearts a few minutes later.

Sun-dried tomatoes and chopped prosciutto were stirred in after the hearts were hot.

I poured the mixture over my cooked pasta, then drizzled the top with Tuscan Olive Oil and sprinkled on fresh basil.

Wowzers!!! For a 10 minute dinner this was off the charts! Had all the right flavahs. :D

For tonight’s entertainment, I rented The Tourist to watch with Ben, while enjoying a nice glass of red wine.

Angie kind of drives me nuts, but I cannot resist Johnny Depp. He’s such a versatile actor, and sooooo easy on the eyes. Swoon!

I hate the word "squirt". It seriously pained me to type it twice in this post. There was really no other suitable word choice though!
