Well, you had to see this coming…
The step mill and I made up! It’s a love/hate relationship, you see. I love what it does for my bod, but I hate it with all my heart because it’s so friggin’ hard. Well, the love won out and we shared 20
wretched magical minutes together after a 40 minute treadmill sesh tonight. Sweat. Pouring. Sore. Good. Is that a haiku?
In other news, I whipped up a TWO step, TWO minute dinner tonight – Beef & Bean Burritos!
This is a Pioneer Woman recipe and it’s crazy easy. All you do is layer refried beans, seasoned ground beef and cheese on a flour tortilla then roll it up.
I used Trader Joe’s Fat-Free Refried Beans inside the burrito. They are FANTASTIC.
Check out the ingredient list!
In review, step 1: layer and roll.
Step 2: Put the burritos on a plate, or in my case in an individual-sized baking dish, top with enchilada sauce and nuke for 2 minutes!
See? Two steps, two minutes!
These burritos taste exactly like the ones my Mom used to make growing up. Hearty and just GOOD. You know?
For freshness I added Tostitos Restaurant Style Salsa on top. SO glad this stuff is back on supermarket shelves!
Ben’s out with some co-workers this evening, so I made him a casserole dish of burritos topped with insane amounts of cheeeeese.
He can just pop it in the oven when he gets home!
Month of Holiday Giveaways
I’m pulling an Oprah and am giving away another one of my very favorite things – 24 Snack Packs of Barney Butter!
Barney Butter is almond butter that’s different then other almond butters. It’s silky and creamy – not gritty at all. Plus they’ve got the roasted almond flavor juuuuust right.
My Mom keeps a jar of Crunchy Barney Butter hidden in her house so she can snag a spoonful whenever she wants, without having to share with my Dad. Muwahahaha!
Anyways! Each snack pack is 90 calories and just the right amount to smear on an apple, top a slice of bread or smother a slice of warm banana bread. Hey, whatever floats your boat. Enter to win by 5pm, Friday 12/10 by leaving a comment telling me your favorite thing to pair with almond butter!
Good, smooth, creamy & roasted luck!
