I guess I spoke too soon (or perhaps jinxed myself?!) as my morning Mom walk was foiled by rain today! To be honest with you, it was pretty awesome being able to sleep in an extra 30 minutes to the sound of the rain though. There are few things in life as cozy as that.
As soon as I crawled out of bed, I got to making breakfast – a Peanut Butter Vanilla Protein Smoothie!
THIS IS THE BEST!!
In the mix:
1 frozen banana
1/4 cup raw old fashioned oats
1 scoop vanilla whey protein powder
1 Tablespoon peanut butter
1 cup unsweetened vanilla almond breeze
Let ‘er rip!!
My blender has a “liquify” button that I use to make sure the oats get completely pulverized.
The result is a sweet, creamy, THICK, milkshake-y smoothie! The best kind!
Served in a Quik Trip cup for on-the-go enjoyment.
For lunch, I packed some leftovers from last night’s BBQ Feast.
Tangy, tender BBQ Pulled Pork,
and lightly sauteed, fresh veggies.
Some people hate leftovers, but I actually love them! They’re kind of a rare treat for me, since I usually pack whatever we have left for Ben’s lunches.
Not this time though! This pork roast made ~1,000 pounds of pulled pork, so I had my fair share. The rest is freezer bound!
I also brought a Dark Chocolate Almond Cascadian Farm granola bar for a snack.
These bars are gooey, chocolatey and OH SO GOOD! Such a treat!
They’re saying we might be seeing some sunshine today?!?!? I don’t want to get my hopes up…but my hopes kind of need it – I feel like I haven’t seen sunshine in weeks!!
