Dinner’s In the Bag

WHEW – made it…Monday is ovah!!

After work I had to go grocery shopping and I almost didn’t make it! My gas light came on as I got home from Iowa City yesterday afternoon, and I guess I was pretending to be a dare devil and not fill it up until I was practically running on fumes today. My heart was seriously pounding as I imagined myself stuck on the side of the highway with an empty gas tank… 8O Thankfully, I made it to a gas station just in time and filled that baby right up!

After dodging that bullet, I proceeded to shop in the madhouse that was the grocery store. Who knew Monday night is the time to see and be seen there?? I buzzed in and out, dodging the other shoppers and grabbing my groceries as fast as humanly possible. Mostly because I was so excited to come home and make dinner…Boil in a Bag Omelets!

These are the omelets we made at the tailgate on Saturday and they are so.much.fun! :D Plus, they only take 5 simple steps to make:

Step 1: Gather the ingredients you’d typically put in an omelet.

For Ben and me it was:

  • Cheddar cheese
  • Deli ham
  • Chopped asparagus
  • Chopped mushrooms (for Ben!!)
  • Eggs

Step 2: Take out a freezer bag. They must be freezer bags!

Step 3: Crack eggs (1 whole egg + 2 egg whites for me,) add toppings into bag and seal.

Step 4: Squish mixture until all ingredients are combined.

Step 5: Boil your bag in a big pot of water for 15-20 minutes, depending on how many toppings and eggs you have.

Slide eggs out of plastic bag, chop with a fork and chow!

These eggs came out perfectly!! Sooo fluffy and done just right!

Honestly, it’s faster just to make an omelet in a pan, but I’m loving this method because:

  • Each diner can customize their own omelet
  • There is no additional cooking fat involved
  • You can easily feed a crowd in 15 minutes

This is also a very kid friendly dinner. I’m sure they would get such a kick out of seeing their dinner being boiled in a bag. :)

I did some research about the safety of boiling your food in a freezer bag and found no evidence that it is unsafe. Boil away!

FYI – I’ll follow up with you on the organic food/Jillian Michaels discussion from this morning soon, but first I’m off to spend time with Ben, then it’s Gossip Girl!! Tonight’s episode has caused a ruckus with the Parents Television Council…juicy!
