Gooood morning! It’s already 55 degrees here in Iowa – go us!
This morning I went old school with my oats:

- 1/2 cup old fashioned oats
- 1/2 cup milk
- 1/2 cup water
- 1 medium banana
- tosted almonds
- toasted coconut
- sugar-free syrup

Man – classic oatmeal combos are where it’s at! I’ve been saying that a lot recently… This bowl was creamy, sweet, crunchy, filling, delicious, easy…I could go on all day! Do you guys make stove stop oats? Do you want to know how, if you don’t? Let me know and I can post directions if you’d like! What do you usually eat for breakfast?

For lunch I packed a Field of Greens – if I make it, I will eat it. Get it? “Field of Dreams – if you build it they will come”…anyone? Bueller? I used the rest of my air lettuce package and when I took a picture, the lettuce seemed to stretch on for miles…hence my Field of Dreams reference. Anyways, I scattered the rest of my artichoke salsa from dinner last night over the greens and topped with some feta…because feta makes everyting betta!
I paired the salad with an AE Dairy Key Lime Pie Yogurt and some delicious cantaloupe. WHICH I would have gotten to eat for lunch yesterday, but my dear husband snatched my pre-made bowl out of the fridge and ate it. Men. Just kidding, he didn’t know it was for my lunch





As I was pouring my coffee today and stirring in some cream, thoughts of my favorite job I ever had drifted into my head. In highschool I worked as a barista (fancy talk for a gal that makes lattes) at a local coffee shop and it was the best job in the world. I had so much fun making amazing coffee creations, smelling the coffee beans roasted on-site and whipping up the small pastries and dishes that we served…plus I got to work with two of my best friends, which was great fun too. Which got me thinking - what’s your favorite job you’ve ever had?
At 12:01 we’re officially closer to Friday than Monday, people!!
