I remember walking out of Eclipse this summer and thinking “That was good… just not great…” Umm, no. That movie is friggin’ TERRIFIC!

My heart beat rapidly for all 124 minutes of the flick, and my eyes were glued to Edward’s beautiful teenage face. Sigh.

So true…so true… HA! (thanks to @xianrenaud for that pic!) Now I’m really sad I read the entire book series in ohhh two weeks this summer, because now I have nothing to look forward to until the next movie is released in November 2011. Maybe I’ll re-read it. No that’s just crazy. Well, maybe. We’ll see…

In other news, yesterday my Mom and I were looking at books for my nephew Finn for Christmas (I love giving books to children as gifts. If I wasn’t eating, sleeping or breathing when I was young, I was READING!) and flipped through a ton of Dr. Seuss books. One in particular got me thinking about the ingredients I had in the fridge that very moment, and what I’d be making the next morning for breakfast…Green Eggs & Ham! I DO like them Sam-I-Am!
Ok, so they don’t look THAT green but, trust me, they were.
That’d be 3 egg whites + salt & pepper + ~1 Tablespoon pesto whisked and cooked up with a big handful of torn baby spinach.
Served with a side of bacon. The “ham” portion of our show!
Pesto in eggs = magical. Give it a whirl sometime!!
Now that I am all fueled up, Ben and I are going to go show the rest of our errands who’s boss. Hmph!
Come on back tonight to see who won the Larabar Giveaway, plus the upcoming week’s dinner menu. Have a great Sunday!

Did you read a lot when you were growing up?
The more that you read, the more things you will know. The more that you learn, the more places you’ll go.” – Dr. Seuss

I would not eat them in a box
