Well, still no baby over here! I stand by, and am mentally prepared for, my months-long prediction of an August 1st birthday, but physically I am so ready to not be pregnant anymore! All weekend I fought a losing battle against my energy reserves, and am pretty much only comfortable when laying down. If I’m up and about for too long my back starts to hurt and, well, all productivity is pretty much lost.
Such is the life of a pregnant person though! I know this will all be a distant memory in a few weeks so I am trying to just keep on keepin’ on. : )
At any rate, although I was napping and taking it easy for a good portion of the weekend, Ben and I did manage to have a few fun moments, including stopping by the Downtown Farmers’ Market one last time before baby on Saturday morning. I know I say this every week, but it. was. PACKED!
We had a cool front move through late last week, and the weather felt so deliciously fall. Everybody and their brother attended to purchase their weekly produce, listen to the bands on each corner play, people watch, and eat, natch!
The line for Pupusa’s was unbelievably long (and I still have the taste of my last one etched in my brain!) so we stopped by Jethro’s afterwards for brunch. BBQ + brunch? It totally worked. My sweet mountain man enjoyed a bloody and skillet with smoked brisket while I went for classic cinnamon French Toast with a side of bacon and hash browns.
I ate every last drop. Holy unbelievably crispy bacon. Locals: if you’ve never brunched at Jethro’s, I highly recommend!
Sunday I attempted to induce labor by whipping up an eggplant-based dish, as several people recommended that to me last week. Obviously it didn’t work AND the dish ended up tasting terrible. Today I’m trying pineapple, another popular suggestion. Wednesday, a crow bar.
(Of course I realize this baby will come when he’s good and ready…but it never hurts to try.) ; )
In the meantime, I thought today might be a good day to roundup a bunch of my favorite quick and easy IGE recipes that take 30 minutes or less to prepare. Whether you’re low on energy, short on time, or just wanting a fast recipe to make after work tonight, all of these fresh dishes can be made in 30 minutes or less – most, if not all, with fridge and pantry staples. Might just have to swoop by the store tonight for a few fresh essentials.
