Good morning – welcome to your weekend!
I went the special friday breakfast route again this morning, and made Salsa & Scrambled Eggs!
All I did was crack 1 egg + 2 egg whites in a small bowl.
Add a dash of hot sauce – which I promise, doesn’t make the eggs hot it just gives them more flavor.
Whisk to combine…
And scramble in some non-stick spray!
FYI – I actually like to use the cheaper, $12-15 skillets you can get from places like Target. Since they’re more inexpensive, they’re thinner – which means they heat up faster and cook my eggs in less time!
I topped my eggs with some zesty, fresh salsa and served with a toasty 1st National Honey Wheat Bagel with a smidge of butter. Friday’s don’t start off better than this!
I used Graddy’s All-Natural Fresh Salsa on top of my eggs.
I don’t think I’ve ever had straight up eggs + salsa (well, maybe in a breakfast burrito or something) but Ben recommended I try it, and I’m so glad I did. It’s a really great combo!
A hot, buttery bagel was a great way to round out the meal.
I know I’m going to be wanting something sweet after this. You know me! Maybe I’ll stop by Starbuck’s on the way into work for a skinny vanilla latte. Hmmm…yes, I think I’ll have to do just that!
Well, that’s all she wrote for this morning. I’m rocking a half day at work today, so I’ll be back for lunch!

- Get new tires
- Bank
- Deep clean kitchen
- Deep clean bathroom (ugh)
- Laundry
- Answer emails
- Work on blog
- Start sorting through Christmas decorations (!)
- Organize office
- Create grocery list for next week
- Prep dinner
That’s a loooong list for just one afternoon. I’m crossing my fingers that it least 1/3 of them happen!
