Confession 1: Sometimes, I am a messy cook.
Yes – Miss type A, germaphobe, neat freak sometimes can’t keep it all together in the kitchen. It’s true. That’s what helpful husbands are for – cleaning up after the messy chef!
Confession 2: I tried something new tonight - Israeli CousCous.
The verdict? SO COOL! Here’s what it looks like uncooked.

Be careful with these suckers – they roll everywhere!
Confession 3: I hate my kitchen countertops.
Don’t let anyone ever talk you into getting white tile countertops in your kitchen. I wish someone would have told that to my home’s previous owners!
Confession 4: Tonight’s dinner, Lemon Pepper Chicken with CousCous Salad & Roasted Vegetables, rocked my face off!
I sprinkled some chicken breasts with lemon pepper seasoning and cooked them up on the stovetop.
After they were cooked, I placed them on a bed of CousCous Salad. In the mix:
- 1 cup dry Israeli couscous, cooked in 1.5 cups chicken broth
- 1/2 large cucumber (peeled, seeded and chopped)
- 3 roma tomatoes (seeded and chopped)
- capers
- splash of Italian salad dressing
- juice of one small lemon
- salt & pepper
- dashes of oregano and thyme
I LOVE ISRAELI COUSCOUS!!! They’re like chewy pearls of love. Seriously! Cook for 10-12 minutes at a ratio of 1:1.5 – couscous to broth/water, for some seriously amazing stuff.
Confession 5: I can’t get enough roasted vegetables.
I could eat them every day of my life. I followed my usual recipe!
The crunchy roasted vegetables were a great contrast to the soft and chewy Israeli couscous. Yum!

Confession 6: I always leave room for dessert.
