Happy Memorial Day!

While a hot wind is whipping and temps are soaring well above 90, at least. it’s not. raining. Yesss! I was beginning to think we’d never see the sun again!

I got my day started with a bowl of cereal and milk so I wasn’t starving by the time we arrived at my parent’s house for an afternoon, Memorial Day grill out.

Total Raisin Bran and unsweetened vanilla almond breeze. I’m kind of obsessed…

Total gives you 100% DV of a number of different vitamins & minerals,

and unsweetened vanilla almond breeze is just the cherry on top.

It never ceases to amaze me how ridiculously yummy it is over cereal. It’s cray-cray!

Ben and I made the entire 2 minute drive over to my folks’ place around 11, and were greeted with Hot Pepper Jelly Dip with chips to chomp on for appetizers.

This recipe is from my Father-in-Law and we all just LOVE it. All you do is mix half a jar of hot pepper jelly (we like Dickinson’s) with 4oz each of cream cheese and sour cream.

The result is a creamy, sweet and, actually not spicy at all, dip. It’s very addicting but is luckily one of those dips that’s just as good with veggies as it is with chips, unlike salsa or something. (Don’t you hate it when magazines tell you to dip veggies in salsa to save calories? It tastes like nothing!)

Anyways, we fired up the grill soon after and put Ben, the grill master, to work. Steaks were on tap which as you know are his specialty.

It was hot, but not too hot to sit outside and enjoy our lunch under the shade of an umbrella – although I think we would’ve sat outside even if it were 100 degrees. The rain has kept us cooped up for too long!

I piled my plate with Grandpa’s Pasta Salad, corn on the cob,

grilled sirloin steak, which my Mom had marinated for 6 hours in oil, vinegar, a diced onion, salt, pepper and garlic powder (holy cow it was tender and GOOD,)

and fresh watermelon slices. Ahhhh slices – my favorite way to enjoy watermelon!

omg which reminds me – when we were in DC last week we pulled up next to a car with a woman in the passenger seat whose entire FACE was buried in a giant wheel of watermelon! It was kiiiind of hysterical!

The meal was light and summery – a perfect kickoff to the season. Finn thought so too!

Ok back to eating.

I was stuffed, but had saved a tiny pocket in my stomach for a hunk of warm brownie served with a spoonful of vanilla ice cream, and drizzled with luscious caramel sauce. Talk about obsessions!!

We’re still feeling the spirit of spending the day outside, so Ben and I are venturing out for a loooong walk. Both of us need the exercise and all this free time comes to a screeching halt when it’s back to the grind tomorrow! Have a wonderful rest of your weekend!
