I really love curating recipe roundup posts, and I hope you like reading them too. Going through old posts is like like flipping through an old, well-used cook book, re-discovering favorites and a few soon-to-be ones too. Except, well, there’s no paper.

Anyway, no recipe round up post gets me quite as amped as the 4th of July one does. I don’t know what it is, but these recipes get me crazy excited! Maybe it’s the nostalgia of making and eating recipes I remember my Mom whipping up every summer like Dirt Cake, Classic Potato Salad, and Judy’s Baked Beans. Or perhaps it’s the thrill of giving summer staples an updated twist like S’More Rice Krispie Treats and Grilled Sweet Corn with Chili Lime Honey Butter.

Whatever it is, the 4th of July is one holiday that’s about having FUN with your food. And fireworks. And Dad’s Killer Beergaritas. But I digress.

In between parades, badminton games (omg I seriously just now remembered that I was part of a badminton duo in college gym class called Team Blood Lust. BAHAHAHA, we were awful,) and boat rides, give a couple of these fourth of July-friendly recipes a try next week!

Patriotic Apple Rings

I recently whipped up this cute, festive, crunchy, and creamy snack for The Laughing Cow to celebrate the 4th. All I did was slather thick-cut rings of fresh red apple with a Light White Cheddar cheese wedge, then topped ‘em with fresh blueberries. Delicious and easy!

A summer classic, Dirt Cake is a no-brainer for dessert on the 4th. This sweet layered treat is a hit with both kids and adults. (I hear Glutino makes a great gluten-free “Oreo”, too!)
