How’d your day go? Mine FLEW. Like, see ya’ Monday, I’ve got better things to do…such as head to the gym! I’m now 101% over my temporary fear of re-joining the gym and am loving my time there.
Of course I still deal with the, “ugh, it’d be so nice to go home right now, get in my ‘Js and cook dinner…” but once I’m there, I’m totally in the groove. Today I knocked out another 30 Minute 3-2-1 Treadmill Run followed by 10 minutes on the stair climber. HOLY SWEAT BUCKETS – it felt great! :D
I came home starving and was SO excited to cook dinner. I got two, gorgeous acorn squash at the store last week and have been dying to STUFF THEM. Oh yeah! I made Sausage & Cornbread Stuffed Acorn Squash for dinner!
Here’s said beaut!
Squash can sometimes take a while to cook so, after I pre-heated the oven to 425 degrees in preparation to bake it, I pierced the middle with a small knife ~6 or 7 times, then popped it in the microwave for 2 minutes to soften it up. After 2 minutes, it was pretty easy to cut in half!
After I scraped out the seeds, I nuked the halves for 1 additional minute.
Seasoning time! A drizzle of extra virgin olive oil, garlic salt & pepper, and into the oven they went for 25-30 minutes, or until a knife inserted into the thickest part of the squash went through easily.
While the squash baked, I got to work on the stuffing. Can’t have stuffed squash without stuffing, can ya’?! I browned up ~1/3 lb mild turkey sausage with 1 small Granny Smith Apple.
In goes ~1/4 cup chicken broth,
and the whole thing is cooked until the apples are semi-soft (not mushy.)
In the background we’ve got Cornbread Stuffing workin’ too.
All this takes is 1 1/2 cups boiling water or chicken broth, then you pour in the contents of the box and put a lid on it for 5 minutes. EASY! :)

The sweet squash with the tart apple are the ying to the salty turkey sausage & cornbread stuffing yang. The worked together PERFECTLY!
And, hello, edible bowl, anyone?! You know how I like my edible bowls… ;)
The thing I love about squash is that the texture is sometimes a surprise. While this acorn squash tasted like an acorn squash, it almost had the texture of spaghetti squash!
Oof, I’m stuffed! (pun intended)
Oh, here’s Ben and my FAVORITE way to enjoy extra stuffing. Lay it out on a cookie sheet and broil until golden brown.
Better than popcorn! :D
In other news, a home siding sales guy came to the door while I was cooking dinner and asked if my Mom or Dad was home. Oh yes he did.
His reaction to the news that I, in fact, owned the home was almost enough to forgive him for the mistake. He was SO embarrassed, muwahahaha. Do you see what I have to deal with?! ;)
