Wanted: One, part-time gardener. Duties include not letting pre-historic looking weeds below owner’s deck grow to knee height and clover leaf patches run completely amuck. Must be self-motivated and comfortable with two small dogs barking non-stop through adjacent fence. Payment will come in the form of Peanut Butter Pies and Nectarine Vodka Chillers in lieu of cash.

Long story short: 1 insanely rainy June + 1 insanely lazy gardener (me) = the funkiest bunch of weeds I have ever seen growing underneath my back deck – which I had the luxury of pulling this afternoon after work.
I know. I did this to myself. But still!
Oh, before I move on, can we please acknowledge the Petunia’s hilariously growing amongst the Amazonian weeds?? They must have blown in from a neighbor’s garden or something. BAHAHA!
I kept ‘em.
In other news, I’ll give you one guess as to what I made for dinner tonight…
If you guessed something involving pitas, you’d be…right! Breakfast Pita Pizza!
Clearly I am obsessed with pitas this week, AND pizza for that matter (you too, according to last night’s comments!
)
I just couldn’t resist using the rest of ‘em up tonight to make a cheesy, eggs and bacon topped pizza pie!
I started by heating a non-stick sprayed skillet on medium heat, then wilting a big handful of baby spinach in it.
Meanwhile, I whisked together 1 egg + 1 egg white, salt, pepper and hot sauce in a bowl.
When the spinach was cooked down, I added the eggs and scrambled them until they were just barely done.
Next I piled the cooked eggs on top of a whole wheat pita and topped them with cheddar cheese and 1 piece of cooked & crumbled bacon.
Into a 425 degree oven for 8 minutes then topped with a few more dashes of hat sauce. Booyah! The BEST breakfast for dinner!
Salty bacon, gooey ham and soft scrambled eggs.
Breakfast Pita Pizza
Serves 1
Ingredients:
1 whole egg
1 egg white
salt & pepper to taste
dash of hot sauce
2 cups baby spinach, chopped
1 whole wheat pita
1/4 cup sharp cheddar cheese, shredded
1 piece cooked & crumbled bacon
Directions:
1. Preheat oven to 425 degrees. Whisk together egg, egg white, salt, pepper and hot sauce in a small bowl. Set aside.
2. Heat a small skillet over medium heat and spray with non-stick spray. Add spinach and cook until wilted, about 1 minute. Add egg mixture and scramble until eggs are just barely cooked through.
3. Line a baking sheet with foil and place the pita on top. Pile the egg and spinach mixture on top of the pita, followed by the cheese and cooked bacon.
4. Bake for 6-8 minutes, or until cheese is melted and bubbly. Cut into four slices and serve.
Cray-cray, people!
Now if you’ll excuse me, these bug bites aren’t going to itch themselves.
