I’ve officially changed my future retirement home location from Praiano to the Lake of the Ozarks.

That is to say – OMG WHAT A FREAKING BLAST THAT PLACE IS!

Friday morning Ben and I drove 5 hours south and arrived just in time to spend the entire afternoon boating, bobbing, sipping, and in general, having one of the best days ever on the monster-sized lake in central Missouri with our friends.

One of my favorite parts was checking out the homes – nay, estates – dotting the sheer cliff walls, coves, and lawns just off of the water. I am not kidding you when I tell you this 7,000+ sq ft home was one of the smaller places we saw!

Ok, sipping raspberry vodka mixed with coconut rum and a splash of Rose’s Mojito mixer (aka the best drink ever) while floating in the water in pool saddles provided some stiff competition (pun intended.)

Ahh. Lake time is the best time. Now to start that pesky boat fund…

Another thing I loved about the lake were the fun restaurants and bars lining the water where you can park your boat then head in for some fun.

We went to a few places for dinner, but kept the afternoons casual and packed yummy wraps from home for a quick & easy floating lunch. Choosing from an assortment of deli meats, fresh toppings, and spreads, I came up with this Turkey, Avocado & Hummus Wrap that was so good, I made it both days we were out there on the water.

Deli turkey is layered on a whole wheat tortilla with zesty red pepper hummus, creamy avocado slices, and salty pickles for crunch, then rolled and sliced. The fact that it took all of 5 minutes to make made me swoon over this tasty, filling wrap even more. They are awesome for quick lunches any day of the week – whether on land, or lake!

Start the wrap with a tortilla. These organic Whole Wheat Tortillas from Whole Foods are really good. Very pliable and fresh tasting. You could use a gluten-free or regular flour tortilla, too!

Next, spread on a layer of red pepper hummus. Now, I am very brand and flavor loyal to Sabra’s Red Pepper Hummus, but our local Whole Foods doesn’t carry it (ughhhh) so I went out on a limb and tried Chef Earl’s Red Pepper Hummus. It isn’t as smooth as Sabra’s but it definitely has good flavor!

Next layer on low-sodium deli turkey. Two to three slices should do ya’.

Top the wrap off with creamy fresh avocado slices and pickle slices for a crunchy, salty bite.

These wraps will keep perfectly in a Ziploc bag until lunchtime. If you can wait that long to dig in!

Turkey, Avocado & Hummus Wrap

Description

Turkey, Avocado & Hummus Wrap is tasty and filling - and takes just 5 minutes to make.

Ingredients

serves 1

  • 1 whole wheat tortilla
  • 2-3 Tablespoons red pepper hummus
  • 3 slices low-sodium deli turkey
  • 1/4 avocado, sliced
  • pickle slices

Directions

  1. Spread tortilla with hummus, then layer on turkey, avocado, and pickles. Roll, then slice.

Feel free to throw any and all veggies in your wrap. I just loved the combo of these four ingredients. Nothing overpowered anything else, and it was just so GOOD!

Supplement with a fresh peach, cherries, or whatever you’ve got in your produce bin for an awesome, easy, well-balanced lunch.

In other news…

Yesterday we were rudely welcomed home from our summery weekend getaway from this guy, who’s all – Hey, it’s me! The tree in your neighbor’s yard that turns unseasonably gorgeous about a month too early every year making you panic, thinking summer is already over?! Hiii!

BLERG.

I’m not sure if it’s coming down from a fun weekend on the water, or coming home and seeing this – but I’m not ready for summer to end!
