Ay, yi, yi – the leaves haven’t even fully fallen from the trees yet and the sick season has already descended upon us!
Just this past weekend I visited the walk-in clinic and between the hour and a half wait time, 10+ people coughing around me, and kind yet chatty gentleman who squeezed into the chair rightnexttome then proceeded to ask everything from what I was working on on my laptop, to how to friend someone on Facebook, to if he could friend me on Facebook, my blood pressure was literally through the roof by the time the nurse took it nearly two hours after arriving.
Deep breaths.
Anyway, my Mom got hit first with the flu a couple weeks ago and the second I hung up the phone with her sounding weak as a kitten I sprang into action making a huge pot of Homemade Chicken Noodle Soup from memory, which I delivered less than an hour later to her doorstep. Actually, I can’t say it’s my recipe. It’s actually hers…or rather, her Mom’s aka my Grandma!
That’s right, this Homemade Chicken Noodle Soup is so good that the recipe has been handed down through three generations. It’s the most simple homemade chicken noodle soup you could ever imagine, is ready in 30 minutes, made with fridge and pantry staples and soothes the achy/sick/sad soul. Super easy to make gluten-free, too!
I first shared my Homemade Chicken Noodle Soup recipe way back in 2009, just a few months into my IGE journey, but with soup and sick season upon us I thought this would be the perfect time to re-feature it in a Way Back Wednesday post.
Way back then I shared that we ate this soup every time we visited my Grandparent’s house in Ohio. No herbs, no fuss – just everyday ingredients coming together to create one of the best bowls of soup on the planet.
Like a little black dress, everyone needs a go-to, committed to memory, Chicken Noodle Soup recipe to pull out at a moment’s notice, and I hope this will become yours. It’s probably my all-time favorite soup recipe here on IGE. Ready to enjoy in no time!
Start by sauteing 1 large sliced carrot, 1 rib sliced celery, and 1 chopped shallot or 1/2 small onion in 1 Tablespoon each butter and olive oil, seasoning with salt and pepper, until the vegetables are tender, about 10 minutes. Add 2 cloves minced garlic then saute for 1 more minute. If I’m making this soup for someone who’s under the weather I’ll usually double up on the fat to make it extra decadent and comforting. It’s the right thing to do.
Next add 64oz chicken broth (8 cups,) then turn the heat up and bring to a boil.
Meanwhile, chop 1 large chicken breast into bite-sized pieces, season with salt and pepper, then add to the boiling chicken broth along with 8oz gluten-free or regular pasta. I’ve used pretty much every pasta under the sun in this soup over the years, but for this batch I broke gluten-free spaghetti into small pieces.
Turn the heat down to medium then simmer until the pasta is cooked through. The chicken should be perfectly cooked by that point too. Ladle the steamy soup into bowls then devour. Like I said, simple and soul-satisfying!
Homemade Chicken Noodle Soup
Description
Gluten-free Homemade Chicken Noodle Soup is ready in under 30 minutes and made with fridge and pantry staples.
Ingredients
- 1 Tablespoon extra virgin olive oil
- 1 Tablespoon butter
- 1 large or 2 medium carrots, peeled then sliced
- 1 stalk celery, sliced
- 1 shallot or 1/2 small onion, chopped
- salt and pepper
- 2 cloves garlic, minced
- 64oz chicken broth, plus more for reheating
- 1 chicken breast, chopped into bite-sized pieces
- 8oz gluten-free spaghetti, broken into pieces (or any short-cut pasta)
Directions
- Heat olive oil and butter in a large soup pot over medium heat. Add carrots, celery, and shallot, season with salt and pepper, and then saute until tender, 10 minutes. Add garlic then saute for 1 more minute. Add chicken broth then bring to a boil. Season chicken with salt and pepper then add to boiling chicken broth along with pasta. Turn heat down to medium then simmer, stirring occasionally until pasta is cooked through. Taste then adjust salt and pepper if necessary and then serve.
Notes
Add more chicken broth when reheating as noodles will continue to soak up broth.

Can you call it homemade chicken noodle soup when you use boxed broth? Despite the boxed broth, it makes me want it right now.
Since discovering I have CD a few months ago I’ve been trying to recreate my list of easy to go to family favorites. I tried this over the weekend and it was delicious!
One thing I’ve really been missing is Club Crackers…. your photo shows this soup with what appears to be a butter cracker, can you please tell me that this is in fact a gluten free butter cracker? I’m so sorry to hear about your diagnosis, Angel, but I think you’ll find that you can recreate many if not all your favorite comfort foods to be GF! :) The crackers in the photo are Glutino brand, I believe. Definitely no Keebler crub cracker, but they do in a pinch. ;)

Hi there,, Ive made homemade stock for years the old fashioned way, but I tried this one and LOVE it so quick and easy, and the GF noodles(barilla brand are great) Question.. Would love to make a bigger batch. Does this freeze well, without the noodles of course? would you still cook the breasts and freeze with the broth? tnx Sue

Thank you for this amazing soup! I made it last night and my boyfriend (who claims to not like soup) couldn’t stop eating it… and didn’t believe I made it myself. I made it extra chunky by doubling the chicken & veggies and using GF orzo. I have a feeling that was the first batch of many!

Kristin, I just made your Chicken Noodle Soup recipe in my Instant Pot and it was soooo good. I had to adjust just a couple things and it turned out amazing! So delicious and simple! Love that there weren’t a tonnnn of ingredients, spices, etc, but it made such a hearty meal. This will definitely be in my regular, winter rotation. Plus I can use the ends and peelings for a veggie broth. win-win! Sadly my gluten free pasta got stuck together in some areas (I’ve only found one GF long strand brand that doesn’t) I think next time I”ll use a different pasta shape, but no biggie.

Super recipe! Just a perfect go to easy comfy food type of recipe. We loved this. My daughter is allergic to chicken but loves soup and was sick so we just browned turkey sausage and added that to her bowl but used rotisserie chicken in the rest of ours. Thanks for a great recipe!!!!
How do you get yours so bright & yellow! When I made this it came out as a brownish color. I used Pacific Broth as I saw you recommended it in a previous comment.
Hi Marina! The color will just depend on what broth/stock you’re using. The butter always makes mine a little more yellow too. Pacific brand stock is a little darker because it’s stock (which I find to be more delicious) but if you want yours lighter in color stick with broth!

Husband gave me his plague so I was looking for a quick chicken soup recipe I could make with what I had on hand since I’m sick and don’t want to go out. Didn’t have celery so just used celery salt in place of the salt on the chicken. I had a small sprig of rosemary that I threw in while everything boiled just because I had it and I could. Turned our great! Just what I needed. Thanks!

Today is the second time I’ve made the chicken noodle soup. I made it last time with broken up spaghetti and today with wide egg noodles. I’m not a chicken noodle soup person but this is sooo easy and delicious. We have elderly people in our church who think this is the only kind of soup so I’m making it for three of them My grandkids think it’s great too!! I know how to make chicken soup I want to know where to buy GF pasta for the soup
I made this using chicken thighs and brown rice noodles. Whole family loved it. I loved it because it was quick and easy to prepare with a short list of ingredients that produced a comforting and satisfying supper.
I love this recipe. If you want to make it just slightly more flavorful, and make them wonder what’s in there, add 1/4 to 1/2 teaspoon of curry powder. don’t add more than a teaspoon, or it takes over. But a smidgen of curry powder adds an aromatic flare that keeps them wanting more to try and taste what in the world you put in there.
Love the recipe, broth, chicken and vegetables all turn out great, but spaghetti noodles (pasta) are to slippery for soup, like trying to eat spaghetti soup, even with the noodles broken into smaller pieces, noodles constantly slipping off your spoon. I recommend using some type of egg noodles for a stickier noodle, I also added 3 bouillon cubes, Chicken, Herb and Spices to kick up the chicken flavor. You can purchase gluten free egg noodles, but some people can’t have egg products, so consider this before changing. Otherwise great recipe base to modify to your liking.
Can you freeze this before adding the noodles? Curious because this would help out a lot when kiddos are sick and I can thaw and add noodles when needed.
