Like a full wine pouch and a summer afternoon (this is me telling you I just got this wine pouch which, let’s be real, is a fancy name for a bag of wine, and am SO EXCITED!!!) nothing makes a Super Bowl Sunday quite like a platter of spicy orange food. There’s no doubt about, dips reign supreme at tailgating and game-day parties. I go nuts for a good dip, and am still holding out hope that one day AE’s French Onion Dip will go gluten-free. ??  Can you say game changer?! That said, nothing pains me more than seeing a yummy, gluten-free dip get contaminated by a single swipe of a Triscuit. It’s always the Triscuit’s crusty gluten dust, isn’t it?

Anyway, if you’re hosting or attending a Super Bowl party with people who have mixed dietary needs, take these stuffed mini peppers. Not only are they super adorable and fun (hello edible vessels!) but they eliminate the issue of contaminating an entire dish of dip with gluten-containing dippers – because the dip is in the dipper, do you dig it? (Sorry, had to.) Plus, I just have to say it, dips start losing their appeal after half of it has been demolished and things start getting kind of gummy and gross, right? Problem solved with these stuffed 2-biters.

If you’ve never had a mini sweet pepper, prepare to get googly-eyed. They’re mild like bell peppers, and have very little seeds and membranes, but best of all, they’re perfect for stuffing! Let’s talk about said stuffing real quick, because the only thing you’ll love more than these wee baby peppers is what’s packed inside them.

Store bought hummus is combined with buffalo wing sauce, green onions, feta cheese, and a pinch of cayenne pepper. That’s it! All the buffalo flavor you adore and crave on game day, without the need for a wet wipe. Definite score (pun intended!) I know you’ll love these cute, perfectly spicy bites!

Start with a 10oz tub plain hummus – you know Sabra is my ride or die!

Scoop the hummus into a bowl then add 1/4 cup buffalo wing sauce and mix until well combined. I love Frank’s, which is gluten-free.

Next add 3 small or 2 large green onions that have been chopped, 1/4 cup crumbled feta cheese, and a pinch of cayenne pepper for an extra kick, then mix to combine. FYI you could omit the feta if you want to keep this appetizer dairy free, or if you just don’t care for the flavor.

Last step is to fill the mini peppers. You’ll need 1lb sweet mini peppers. You can find these everywhere from the regular grocery store to Costco and like I said, they’re mild like bell peppers so anyone can eat them.

Slice the tops off the use a knife to remove any ribs on the inside. These mini peppers are great because they have very little ribs and seeds, if any, so it just takes a second to clear them out. Finally, scoop the buffalo hummus into a large Ziplock bag then snip the corner off and fill each pepper to the top.

Squee – so cute!! The buffalo sauce thins the hummus out a bit so I arranged my poppers at an angle to keep the filling inside. An easy way to do this is to put a small plate in the center of a large plate then place the mini peppers propped up onto the small plate. However you serve them, enjoy this lighter take on the classic buffalo wing!

Ingredients

  • 10oz plain hummus
  • 1/4 cup gluten-free buffalo wing sauce (I like Frank's)
  • 2 large or 3 small green onions, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • pinch cayenne pepper (optional)
  • 1lb mini sweet peppers

Directions

  1. Add hummus and buffalo wing sauce to a bowl then mix until well combined. Add green onions, feta cheese, and cayenne pepper then mix to combine. Scoop mixture into a large Ziplock bag then refrigerate until ready to use.
  2. Slice the tops off the mini peppers with a small sharp knife then remove any seeds or membranes inside. Snip the corner off the bag with the buffalo hummus then fill the mini peppers and serve. Hummus can be made ahead of time, but wait to fill peppers until just before serving.
