If the developers bulldozing the serene field behind your home just posted plans for an apartment complex – eat a Gluten-Free Fudgy Brownie.
If you’re attending a wedding in one week and have zero dresses that currently fit – eat a (slightly smaller) Gluten-Free Fudgy Brownie.
I repeat, if your toddler declares he is done with naps – EAT A GLUTEN-FREE FUDGY BROWNIE!
Even if you don’t have a reason to drown your sorrows in chocolate, you are 1 bowl and 6 ingredients away from the most delicious, dense and gooey brownies ever, and who can say no to that?!
The recipe for Gluten-Free Fudgy Brownies is one I’ve been making for over a decade, actually. It comes from the Wuollet Bakery in Minneapolis, MN, which had a location just around the corner from my first apartment in the city after college.
Ultra-dense and gooey, crackly on top and fudgy in the center, your search for the perfect gluten-free brownie recipe ends here because, lucky for us, Wuollet Bakery shared the recipe for their world-famous brownies and they’re just as delicious made with gluten-free flour instead of all-purpose – WOO!
So, grab a cold glass of milk and eat a Gluten-Free Fudgy Brownie!
How to Make This Recipe:
Start by adding 4oz unsweetened baking chocolate to a large, microwave-safe bowl with 3/4 cup butter or vegan butter like Earth Balance, which I used so Lincoln could have some. Works just the same!
Microwave on high for 1-1/2 – 2 minutes then whisk until the chocolate is completely smooth. (Drool.)
Next add 2 cups sugar then whisk until sooth, and then add 3 large eggs and 1 teaspoon vanilla then mix until smooth.
Lastly, add 1 cup gluten-free flour blend (you could use all-purpose if you don’t need to eat gluten-free,) then whisk until incorporated.
Note: be sure to use a “recipe ready” or “cup for cup” gluten-free flour that includes binders, versus plain rice flour or almond flour, etc. I use King Arthur Gluten-Free Baking Mix and it works great.
Not even going to pretend I didn’t lick the whisk!
Pour the brownie batter into a foil-lined, nonstick-sprayed 9×13″ baking pan then bake for 30-35 minutes at 350 degrees. Check the brownies around the 13 minute mark – if the sides are browning too fast, gently place a piece of foil on top then continue baking.
Let the brownies cool completely (<– yeah right!) then lift them out of the pan using the foil ends. Slice with sharp knife then serve sprinkled with powdered sugar, if you please. Have a glass of milk handy because these babies demand it. Thick, dense, fudgy, and perfectly chocolatey. Enjoy, enjoy!

Gluten-Free Fudgy Brownies
Description
Gluten-Free Fudgy Brownies are the ultimate, dense and chewy brownie. Made in just one bowl, these gluten-free brownies are easily made dairy-free, too!
Ingredients
- 4oz unsweetened baking chocolate
- 3/4 cup butter or vegan butter
- 2 cups sugar
- 3 large eggs
- 1 teaspoon vanilla
- 1 cup gluten-free flour baking blend (or all-purpose flour if you do not need to eat GF)
Directions
- Preheat oven to 350 degrees then line a 9x13” baking pan with foil and spray with nonstick spray. Set aside.
- Add baking chocolate and butter to a large, microwave safe bowl then microwave for 1 minute and 30 seconds on high. Whisk until chocolate is smooth or microwave for 15-30 more seconds if needed to fully melt chocolate. Add sugar then whisk to combine. Add eggs and vanilla then whisk to combine. Add flour then stir to combine.
- Pour batter into prepared baking dish then smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center of the brownies comes out clean. Check brownies at the 10 minute mark - if sides are browning too quickly, gently place a pice of foil on top then continue baking. Cool completely before removing brownies from pan using the foil ends, then slice and sprinkle with powdered sugar, if desired, before serving.
Notes
- Be sure to use a “cup for cup” or “recipe ready” gluten-free flour with binders added vs plain rice flour, etc. I used King Arthur Gluten-Free Baking Mix.

I don’t! ? I had to give it to my parents when I went gluten-free since I’d used it to bake regular goodies in. It probably would have been safe to use, but I just got all new stuff just to be safe. LOVED that pan!
Long time reader but never commented before but the non napping toddler comment made me! We have 3yo and a 5 month old boys and the 3yo stopped napping for 3 months after the baby’ was born. He was in a crib too until about 2 months ago. Keep having quiet time and your guy will likely go back to napping again eventually!! Good luck!
That’s what were doing too – you can nap or read books but you’ve got to stay in your room for quiet time (or Mommy will get nothing done…EVER! ?)
I’m curious what was the sneaky non-gf ingredient in the taco soup? I have celiac too, and my husband and I went out to dinner last night and I was shocked to learn that this restaurant cooks their aspargus veggie side in pasta water. Thankfully our waiter was great and filled us in, but I always get nervous when I almost make a mistake like that.
I bought a can of Hunts crushed tomatoes and Hunts tomato sauce at the store. I picked up the crushed tomatoes first and located the gluten-free note on the label then assumed all their products are GF. Unfortunately not the case! I don’t even know what made me double check the tomato sauce can AFTER I put it in the pot, but I did and it didn’t say GF so I checked the website and only Hunts tomato PRODUCTS (so crushed tomatoes, stewed tomatoes, diced tomatoes, etc) are GF, while their sauces cannot be verified as GF. Extremely irritating, but I’m so glad I figured it out before eating the dish. Just a good reminder to myself to check every single product label before buying!
I LOVE Wuollet Bakery! So much goodness there. Their butter boys are the best, they’re like blondies. I’m giving these a whirl though. Perfect to pull out for my celiac friends.

Girl. Last night, I accidentally bought non gluten free pasta. Didn’t realize it, and as I was cooking it, decided to dump the remainder of some gluten free pasta into the pot RIGHT before I noticed that the first bag of pasta was NOT gluten free! So then my gluten free pasta was mixed in with the bad stuff! Just glad I noticed before I ate any. These brownies sound great.
This is the stuff nightmares are made of! I literally do have nightmares that I’ve unknowingly eaten something with gluten in it – tell me I’m not alone? ?

We can only let our 19 months old nap for about 45 minutes in a day, or he will never sleep at night. He never goes to bed any earlier than 08:30 pm as it is, even though we wake him at 7 every day and have shortened his naptime. I dont think we will be able to save naps once he hits the 2 year mark. I need these brownies badly!

You could probably use 4oz semisweet or dark chocolate chips – I might cut back on the sugar though!
I only have King Arthur gf multi-purpose flour. Will this work or do I need to add something? I also have Pamela’s gf baking mix. Could I substitute that baking mix for the KA brand? I hate to buy more products before I use up the others. They look Delicious!!!
I think both of those would work – just check the ingredient list to make sure there is a binder in the mix (xanthan gum, etc)

I think that could work! I’d maybe decrease the amount of sugar since the chips are sweetened.

These sound fabulous! My current fav flour is bob’s red mill 1 to 1 baking flour. I’m making brownies for my sons’ birthday party because neither of them will eat cake (oh darn lol) but who can say no to brownies!? I have always used box mixes but would love to try making them on my own for once. I’m going to make a cream cheese frosting to go with it because the combo of chocolate and cream cheese is literally making my mouth water just thinking about it! <3 My older son has insisted on a ninja turtle theme, so I'm dying the icing green with homemade dye. Wish me luck!! I'm hoping this goes well since it will be a first for me.
Question! I just thought of it – do you have any idea if coconut oil subbed for butter would work? I use it in cakes, cupcakes, and muffins, but have never used in brownies and wonder if consistency is more of the issue over flavor. Thank you!! <3
Why use vegan butter to then add eggs?
Do you have a replacement for the eggs thats vegan?
My son is allergic to dairy which is why I use vegan butter.
