Do you remember – way back in February – when I entered my Thai Tofu Pizza in a recipe contest, crossed my fingers, and hoped for the best?!
I flipping WON.
It’s true!!! I won the Nasoya Tofu Recipe Contest!! I got an email last month telling me that my Thai Tofu Pizza had been selected as the grand prize winner, and I’m all – exsqueeeze me? I never win anything, you see, and I’m pretty sure I squealed audibly when I read it. Ahhh!!
A lot of you asked for the recipe the first time I made it, and now I’m able to share – whee!
Thai Tofu Pizza
Serves 3
Ingredients:
1 12″ pre-made pizza crust (or homemade)
1 recipe peanut sauce (see below)
1/2 block extra firm Nasoya tofu, pressed and crumbled
1 cup mozzarella cheese
1/2 cup chopped broccoli
2 sliced green onions
2 Tablespoons chopped mango
2 Tablespoons chopped peanuts
1 Tablespoon chopped cilantro
Peanut Sauce:
3 Tablespoons smooth peanut butter
1 Tablespoon rice vinegar
1 Tablespoon soy sauce
1 Tablespoon water
1 clove garlic
1 teaspoon sesame oil
1 teaspoon chili garlic sauce (could use siracha)
1 teaspoon honey or agave nectar
1/4 teaspoon ground ginger
Directions:
- Preheat oven according to package directions.
- Combine peanut sauce ingredients in a food processor (or blender) and process until smooth.
- Mix 2 Tablespoons peanut sauce with the crumbled tofu, then sauté on medium heat until lightly colored, ~5 minutes.
- Spread remaining sauce onto pizza crust, then top with tofu, cheese, broccoli and green onions. Bake according to package directions, or until cheese is golden brown.
- Top with mango, peanuts & cilantro. DIG. IN!

Congrats!!!! The pizza looks so good. I love thai food, I would love to make this (although I might have to modify it for the carb content). Seriously though it looks amazing.
As far as winning anything, I won an essay contest in 7th grade that gave my family and I an all expense paid trip to Boston (it was a history related contest)
But I would love to win some kind of cooking contest.
Congrats again!

I couldn’t agree more, running IS 90% mental. It always takes me a mile or two to actually get into it. The first mile I always seem to say to myself, “what am I doing, I don’t want to do this.” but after my endorphins kick in, I actually LOVE it! Running is a love/hate relationship and i just pray that most days, I love it more than hate it. :)
Have a gerat night.
Congratulations! I guarantee I’ll be making that recipe in the next week!
Congratulations!
My most memorable win was when I won tickets and backstage passes to an Nsync concert many years ago:)
Congrats! It does look pretty delicious :-)
I won an Atari when I was 10 (or maybe that was my brother) and a Cabbage Patch doll in a school drawing–I guess that might date me a bit as these dolls were once a hot item!
Ok, now I’m being nosey but I read the post & never saw what your grand prize is? Lucky you congrats! I wish myblogspark would send me something ever I joined months ago but no luck yet! I buy granola bars all the time so those would have been great for me.

I’ve been following your blog for a while and you do a great job! I’m thinking about trying your award winning pizza recipe sometime this week. My last couple tries at making homemade pizza weren’t the greatest so I’m banking on this one! :)
Congrats on winning!
Congratulations on winning the contest!!
I’ve won a few things before, but mostly in those random pick contests, not because of actually *doing* something. I’ve won a couple gift cards, a book and some hair products. But nothing that cool!! Congrats again!
