I accidently left a whole jar of mayo out just last night and had to chuck it. I was very surprised to see that on the counter this morning! ;-)

In Germany, they did this daily like it was no big deal. I was quite, um– surprised– that my flatmates would leave out a baked pasta dish for a night or two on the counter and keep taking dish-fulls for leftovers. I think we’ve been bred to be hypersensitive to this– clearly it was still delicious!

This is EXACTLY how my grandmother makes hers and evreybody loves it as well. I think you should state that you shouldn’t add in too much broth or your dressing will be super wet & soggy instead of moist when it’s done.I just pour in enough until the cornbread is really soggy, but not swimming in broth.I also cook mine for 1 hour.You have some great recipes! Very true to soul food! I’m glad you don’t replace ingredients with fat-free items and substitute ingredients. Not that there is anything wrong with that but it’s just getting so hard to find AUTHENTIC southern soul food recipes these days.Keep up the good work.

wow you are brave, i am really squeamish about eating meat that’s sat out anymore than 2 hours since that’s when it gets into its unsafe zone :/ hope it all turns out okay – it did sound delicious!

I definitely would have eaten it! I figure half of the places that I dined at in college were more questionable than overnight chili :) And the elliptical thing… I’ve found that it helps to loosen up my shoelaces a little bit and slide my feed more toward the back of the pedals.

I am EXTREMELY squeamish about leaving food out overnight. I wouldn’t even eat leftover pizza that had been sitting out overnight. I would have tossed that chili in the trash and enjoyed dinner at a restaurant. I will admit, however, that your chili looks might tasty in the pics!

To help keep your feet from going numb, change the incline on the elliptical. I have the same problem. Most ellipticals at the gym have adjustable inclines. I set it at “interval” so it changes for me without me having to think about it.

1. My mother ( a doctor) and I would have definitely eaten the chili too. Those rules are being EXTRA careful and I’m sure one night out won’t hurt anything!
2. My feet sometimes go numb too, but I realized I was standing funny. i have to make sure to either go flat footed or up on my toes every once in a while.

I honestly don’t think I would ever eat something that has sat overnight. I’ve done the same thing, waiting for something to cool before sticking it in the fridge, only to wake up in the morning to still find it sitting on the stove. Anytime this has happened we’ve thrown it all away.

I’m a microbiologist, and I can promise you, that was just fine to eat! First of all, since everything was cooked thoroughly in the first place, nothing that would normally have been on the raw materials could have survived the heat of cooking. Second of all, nothing of consequence could have grown in a few hours in a covered pot. We eat some standard bacteria on everything we put in our mouths, no matter how fresh!

Maybe I’m weird, but I wouldn’t be worried about the chili at all. Growing up, whenever mother made a big pot of something that didn’t fit in the fridge she would either leave it on the stove or just put the pot in the cold oven. We never thought twice about it.

i’m totally paranoid, with a weak stomach…i throw all questionable stuff away! my bf, however, has an iron clad stomach and will eat things that have been out, things that are 2 weeks expired, things that taste sour (milk, tofu, etc) but no sense waste it. hahaha.
