Anyone mind if we start with the most important course first? You know, dessert?
Ben emailed me this afternoon with a very important message. “I have saved you a brownie.”
To which I replied “WHEEEEEEEEEEEEEEEEEEEE”
His response back? “Real good brownie too… I didn’t even take a bite”
To which I asked “How do you know it’s real good if you didn’t take a bite?!”
I haven’t heard back. Bahahahaha!
I’ve waxed poetic about Ben a zillion times on this blog. Somehow the kindest, most thoughtful man picked me to marry, and I love him for a million different reasons. One of them being, of course, that he saves nibbled-on brownies from work, then brings them home to me. ;)
Since my sweetie is working late tonight, I thought I’d return the favor and have his favorite dessert waiting for him when he gets home. Individual Apple Crisp.
And I put toffee bits in the crisp!

Individual Toffee Apple Crisp
Description
Individual Toffee Apple Crisp is sweet, and decadent yet perfectly portion controlled!
Ingredients
- 1 small apple
- 1/8 teaspoon each flour, sugar & cinnamon
- 1 Tablespoon brown sugar
- 1 Tablespoon old fashioned oats
- 1-1/2 teaspoons flour
- 1-1/2 teaspoons cold butter
- 1 teaspoon toffee bits
Directions
- Preheat oven to 375 degrees. Peel then chop apple into small, 1/4" cubes. Toss with flour, sugar and cinnamon in a small bowl, then pour into a non-stick sprayed, individual-sized baking dish.
- In the same bowl combine brown sugar, oats, flour, cold butter and toffee bits. Smush with your fingers until butter is well distributed among the ingredients. Top apples with the mixture and bake for 15 minutes, or until crisp is golden brown.

Ok, let’s be honest…I made an individual-sized serving for myself too. I had to let you know what it tasted like, right?! It was perhaps THE best apple crisp I have ever made. The toffee bits turned caramel-y and chewy as they baked. And it clocked in at under 250 ultra-satisfying calories. Sweet!

I made the Crock Pot Pork Carnitas yesterday using your recipe (including the adobo rub you suggested). My only changes – I substituted pork tenderloin and omitted the Chipotle peppers. It was seriously the most delicious thing I’ve ever tasted from the crock pot. YUM YUM YUM. Thank you!
Also, I really enjoy your blog. I find that your recipes are for the very “regular person” (not too complicated, for the busy person, etc.) and they are always very good. Thank you for giving me some great meal ideas for my family.
And…. For the record, I consider myself an adopted Iowan. My mom is from Iowa and I spent my childhood summers in Iowa at my grandparents’ house, playing with my cousins. I am a Californian who loves Iowa. Go Hawks! :)

I LOVE Skinny Taste recipes! I just made the turkey meatloaf cupcakes with mashed potato frosting . . . SOOOOOOOOOGOOOD! The pumpkin pie dip you could eat with a spoon . . . . or put a scoop full in between 2 Nilla Wafers and freeze for amazing sweet treat! Thinking the Pork carnitas will be on the menu next week!

Thing one..honey crisp apples are amazing. I chopped one up for my chicken salad yesterday for lunch.
Thing two…i will be trying that apple crisp recipe this,weekend(have to get more apples )
And finally yes im a single male..probably one of the few on here.
I love the outdoors, have a ton of books that i read when the weather is gloomy, have a great sense of humor and of course I cook.

How do you make baked taquitos? I made the Santa Fe Chicken a while back and used the rest to make burritos that are in the freezer. I need something new for these leftovers next week!

I’m doing the walk on Friday! (Actually I do more than that during most lunches when the weather’s nice, but still.) And GENIUS idea to make a single-serving apple crisp! That’s one of my absolute favorite desserts, but it’s always dangerous to make b/c I’ll eat half the pan, so this is a perfect solution! (Although you’re missing a key ingredient: ICE CREAM.) And I love my husband’s sweet heart and willingness to anticipate my needs…like last week, instead of letting me clean all the bathroom and do the laundry on Saturday, he cleaned for me on Friday and we did the laundry together on Friday night! Exciting, I know. ;)

What I love most about my husband: he is the patient one. The logical one. When I’m ready to fly off the handle, scream, cry and throw things, he just says, “Hey, calm down, it’s all right.” He’s also much better with money than I am cause otherwise I would spend every dime! :)

aww thats a cute brownie story- my man and I do that all the time, I work in events so I’m forever bringing him home food and he does the same when someone actually brings something to his work- he saved me a whoopie pie once, the first one I have ever had and made sure the filling didnt melt before he got home :)

I love that my fiance has stood by my side during anything and everything I have gone through since we’ve been together. My family has gone through a lot of changes and he has been so supporting and loving through everything. Most of all, I love that is he is my best friend :)

I’m going to have to try this! I made the taco chili crockpot meal you posted a few weeks ago and it was a-mazing! We’ve now had it for dinner, lunch and dinner again.
I’m definitely in a crockpot kind of mood with this cozy fall weather… :)

My hubby is literally the most honest person I know. While some people (his sister!) don’t love that, I think it’s great. He also knows me better than anybody else, so he knows when to be all out with that honesty and when to reel it in a bit! :-)
I could name many other wonderful qualities about him but that was the first one that came to mind and something I hadn’t really thought about before!

I feel so lucky to be in one myself. My boyfriend is the most incredible guy I could ever have hoped to meet! I can be totally myself around him, and he goes out of his way to make me feel loved and cared for and appreciated. We call each other our missing puzzle piece because we completely click. He’s also super cute, a good cook, and incredibly smart. I always joked when I was younger I wanted to marry a doctor, he’s currently in a phd program to become one! ;p
