Chicken Salad Sandwiches are mayo free, light, and refreshing!
Chicken Salad
Ingredients:
6 oz shredded chicken
1/3 cup dried cranberries
1/4 cup sliced almonds
2 green onion, sliced
2 small ribs celery, chopped
Dressing:
1/2 cup plain Greek Yogurt
1/2 teaspoon curry powder
2 teaspoons soy sauce
squeeze of lemon juice
salt, to taste
Directions:
Combine chicken through celery in a bowl. Mix dressing ingredients and pour over chicken mixture. Toss to coat. Serve!
Oh yeah! Couldn’t be simpler, really. And when you find a good chicken salad recipe that doesn’t use mayo – you latch on to it.
Tangy from the yogurt, sweet & chewy from the cranberries, and crunchy from the celery. All mixed with savory, shredded chicken. I used store-bought rotisserie chicken and removed the skin, but you could just use regular chicken breasts too. Enjoy!

I made a double batch, used red onion rather than green, added some chopped apple and a bit of ground pepper. For the yogurt, I used 2% FAGE Greek yogurt, which I’m always looking to use in new recipes. Served it on buttered and pan-fried thin-sliced sourdough bread.
The wife and I both liked it a lot. Our 7 year old loved it too; our 11 and 12 year olds thought it was okay. After a few more times, they’ll love it too.

If you don’t like snapping the green bean ends, try buying a pair of kitchen scissors! Makes life SO much easier and cuts the time in half. :)
made this and it was excellent! but it turned out the dressing stayed somewhat soupy, even after mixing it in with the other ingredients (i did leave out the nuts and onions). any suggestions for future batches?
Hey Jon! Did you by chance use regular yogurt instead of Greek yogurt? The dressing should be nice and thick if you use Greek. Hope that helps!
I’ve never been a big fan of chicken salad because I don’t like mayo, but this turned out great :) I love the flavor twist from the curry and soy sauce. I added avocado to my sandwich and really liked it. Thanks!
