Today is St. Patty’s Day, so I put a spin on the classic corned beef & cabbage to make a Rueben Pizza!
Rueben Pizza
Ingredients:
1 personal size whole wheat pizza crust
2 tablespoons Thousand Island dressing
1/2 cup sauerkraut, drained well
1/2 cup corned beef, chopped
1/4 cup shredded cheese
Directions:
1. Layout your pizza crust.
2. Layer on Thousand Island dressing,
sauerkraut,
corned beef,
and cheese.
3. Bake according to package directions.
Presto – Rueben Pizza!
Who wouldn’t love a classic sandwich, such as a Rueben, morphed into pizza form?
Ok, I know there’s a lot of Rueben haters out there. I won’t try and persuade you to make this if you don’t like them, because it tastes exactly like the sandwich – except way more fun and fabulous!

OH! I’m going to look for those pizza crusts when I’m at Target! Are they in the bread aisle? And I eat lots of weird combos. Especially ketchup on all my veggies (especially cauliflower, green beans and broccoli). People think it’s disgusting and weird. But oh so good!

I love Ruebens — but I especially adore “Rachels” — basically a Rueben but with turkey… most restaurants will make their Rueben a Rachel on requst :) (I know, I’ve asked!)

I love LOVE sauerkraut! I totally understand where you’re coming from, I’ve eaten ever since I was little, I even have eaten it cold out of the can. Your Reuben pizza looks to die for, I can’t wait to try it.

Coworkers and friends are usually pretty grossed out by what I eat but everything’s very normal in the blogging world. Example- Green monsters! They are all disgusted by the fact I put spinach into my smoothie but we all know that it’s the ONLY way to make a smoothie! One by one I’m getting them to try it and they all love it! Pretty soon we’ll change the world lol!!

I absolutely love sauerkraut too. I will definitely have to try that pizza! That’s a good point about the pickle thing. My hubby is the same way, he loves pickles, but won’t touch the kraut!

I just have to tell you I did your 8 minute circuit (3x through) and i have been SO FREAKING SORE for two whole days no. With no end in sight… Ugh killer workout, everyone seriously needs to try it!!
Pizza looks delicious, I’ll be enjoying some traditional corned beef tonight in the spirit of st.patty’s :)

What a great idea for a Ruben! Love it!
Most people think all my food is rather weird. It really doesn’t even phase me anymore so I can’t even think of a specific food off the top of my head. To me, I am completely normal and everyone else is so taboo! :)

I love – LOVE – eating lemons. I eat them like most (normal) people eat oranges. I think this obsession comes from my soccer-playing days, when one of my coaches used to feed them to us during halftime. He swore they opened airways. Not sure if that’s true, but I was hooked anyway!

I’m not a huge fan of sauerkraut, but this pizza does look good!
