By a “little wild” I mean I bought the Little Women double feature – Winona Ryder + Emma Watson versions – then watched them BOTH…in the same night!

Yeeep, Mama’s still got it!

Popcorn’s my usual go-to for movie watching but with it being the holiday season and all, I traded my popcorn for gluten free, Small Batch Chex Mix. ‘Tis the season!

Ben and I both grew up in families that were constantly churning out big batches of Chex Mix during the holiday season, and it’s something we both look forward to doing in our own home every year. Crunchy, salty, and totally addicting. Too addicting! Anytime we make a batch we complain to each other the entire time about how we can’t stop eating it. Problem solved with this small batch recipe that makes just enough for two (or one!)

Small Batch Recipe Notes

  1. Gluten free pretzels get kind of brittle and stale-tasting if they’re mixed in with the other ingredients then cooked, so you’ll want to stir those in at the very end.
  2. I prefer using my 4 ingredient Homemade Seasoned Salt recipe in homemade Chex Mix. Make it once >> use it on EVERYTHING!
  3. This recipe cooks in under 3 minutes using the microwave, although you can use the traditional oven-bake method if you prefer. Instructions for both are in the recipe card below.

How to Make Small Batch Chex Mix

Start by combining equal parts Rice and Corn Chex in a microwave-safe bowl with gluten free O’s cereal and peanuts (I use Planter’s UNSALTED Dry Roasted Peanuts, which are gluten free).

In another bowl, combine melted butter with gluten free worcestershire sauce (at the time of this writing, 12/20, Lea & Perrins in the United States is gluten free,) homemade seasoned salt, garlic powder, and onion powder. Pour over the dry ingredients then use a spatula to fold the ingredients until evenly coated.

Microwave the Chex Mix in 45 second increments, 3 times, stirring very well in between increments. Lastly, stir in gluten free pretzels then spread the Chex Mix out onto a sheet of wax paper or parchment paper to cool completely.

Small Batch Chex Mix

Description

Can't trust yourself around a big batch of Chex Mix? (Me neither!) This scaled down, small batch Chex Mix makes just enough for one or two!

Ingredients

4 cups

  • 1-1/2 cups EACH Rice Chex and Corn Chex
  • 1/2 cup gluten free O's cereal
  • 1/4 cup peanuts
  • 1-1/2 Tablespoons butter
  • 4 teaspoons gluten free worcestershire sauce
  • heaping 1/4 teaspoon seasoned salt (see notes)
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 cup gluten free pretzel twists

Directions

  1. Combine Chex cereals, O's cereal, and peanuts in a medium-sized, microwave-safe bowl then set aside.
  2. Add butter to a small, microwave-safe bowl then microwave until melted, 30 seconds. Add worcestershire sauce, seasoned salt, onion powder, and garlic powder then stir to combine. Pour over dry ingredients then gently fold with a spatula until everything is evenly coated.
  3. Microwave for 45 seconds then stir well. Microwave for 45 seconds two more times, stirring in between, then microwave for an additional 15 seconds (or so) if necessary. Add pretzels then stir to combine, and then spread Chex Mix onto a sheet of wax or parchment paper to cool completely. Store in an airtight container or Ziplock bag.

  • Oven-Bake Method: Prepare recipe through step 2 then pour Chex Mix into a baking dish and bake for 30-40 minutes at 250 degrees, stirring every 10 minutes.
