These are different than my usual sweet potato fries, as I made them with ZERO oil!
All I did was lightly spray a foil-lined sheet pan with non-stick spray, then laid a sweet potato cut into fries on top.
I seasoned them with garlic salt and pepper then tossed to coat.
I baked them for 10 minutes at 425 degrees, then brought the oven rack up to the top and broiled for ~2 minutes on one side, then flipped and broiled for 2 minutes on the other. Just until they were dark brown and crispy.

Sweet Potato Fries
Description
Sweet Potato Fries are so delicious, and are made healthier by being baked, instead of fried!
Ingredients
- 1 large sweet potato
- salt
- pepper
- non-stick spray
Directions
- Preheat oven to 425 degrees then cut sweet potato into fries, about 1/4" wide.
- Place fries on a foil-lined baking sheet then generously spray with non-stick spray, and season with salt and pepper. Toss to coat fries in seasonings and spray.
- Bake for 10-12 minutes (maybe more depending on how thick you cut your fries) with the rack in the middle of the oven. Move rack to the top then turn on the broiler. Broil for 2 minutes then flip fries and broil for 2 minutes on the other side.

Umm, I could NOT tell the difference between these fries and the ones I usually toss with a teaspoon or two of oil before baking. Awesome!

We had sweet potato fries tonight too! You should try mixing some ketchup with curry powder, it tastes awesome with the fries!

Haha, we had Mexican food for lunch too! Have you ever had Alexia chipotle sweet potato fries? OMG, they are sooooo goooood! If you have not, you should try them sometime. My work week doesn’t start til Tuesday, so I’m always sad Monday evenings :(

I like to reserve by weekends for fun, so I try to clean and run errands during the week. Often, especially if work is busy, I just cannot get my “to do” list accomplished during the week. So although my goal is to have weekends open for whatever suits my fancy, in reality weekends are often a mix of “have to get it done” tasks and fun.

I usually make Sunday low key and stay at home. Hey, you would probably like the book, The Warrior Elite (The Forging of SEAL Class 228) by Dick Couch. He profiled a Navy Seal team for 6 months. Those guys are soooooo amazing!

I don’t why I do this every week, but I put off everything I could get done on Saturday until Sunday. And Sundays, we usually spend a couple hours at my husband’s parents’ house for lunch. And then I usually have something I have to pick up at the store, and laundry to do, and a baking or cooking project…I’m usually exhausted by about 6pm! And then worrying about what Monday will bring…Although today, I was busy as usual, but I was pleasantly stressed, not feeling rushed or anything (if that makes any sense). Bring it, Monday!

Kristin, have you read any any Suzanne Brockmann novels? She is a Navy Seal expert–it’s fiction with a lot of romance thrown in. Plus, she’s hysterical. I highly recommend her books! There’s tons of drama, excitement and romance…she’s my fave author!

I always think that thinking about Monday just makes it way worse than it’s going to actually be. . . . ya drive yourself crazy all cooped up in the house thinking of stuff to do but not being able to do it! I’m all for staying busy with fun stuff!!
Glad you liked the movie – I’m not sure I’ll see it in the theatre, but Jason Bateman def. makes it rentable. He’s hilarious!! We saw Transformers 3 the other night – fun summer action flickage is awesome!

This Sunday has been low key… Went to a farmer’s market on my tandem bike that I dusted off from our shed and then made some quesadillas (YAY for mexican lunches!) …. after watching two episodes of PLL I’m ready to get outta the house for a workout. although it would be nice to keep snackin’ on this box of cheerios. hmm.

I love to go to church on Sunday morning. To me, it is the best way to mentally and spiritually prepare for the upcoming week. Then me and my husband went to Chipolte for lunch. We had chicken burritos (Yum) and I broke mine in half and had the other half for dinner tonight. We walked from there to Dairy Queen and shared a hot fudge sundae. I came home and was lazy and talked to my Mom on the phone, did dishes and got on facebook!

the crazy bird stories are crackin me up!!! i usually lay low on sundays unless i get invited to a NASCAR party. i seem to do enough partyin on fri-sat, so i need a day at home to get chores done.

I have that same anxiety level on Sundays. I feel like Sunday is my day to get EVERYTHING done. I’m OK with leaving the house as long as I’m home by mid-afternoon. Also, sometimes we go to a family dinner on Sunday nights, which is fine as long as I get everything done beforehand. I feel like such a failure if I don’t get everything done on Sundays! I also have a hard time sleeping on Sunday nights, b/c I’m thinking about the week :/

MMm…I have a passionate love for sweet potato fries. :) I’m definitely going to make some tonight.
I prefer to spend my Sundays with a little fun and a liiiittle work. Usually, it’s in the form of grocery shopping and maybe some organizing/vacuuming around the house. My fun is generally spending a few hrs in the morning with the runners. We go on a run and then meet for coffee and chatting afterward. This weekend however, we took on a deck building project so it was pretty go-go-go as of 8am on Saturday morning. But that being said, we now have a brand spankin’ new deck! And I even managed to get a 4.5 mile run in this morn.
