Vegetable Soup

Brothy and nourishing Vegetable Soup is chock full of fresh veggies and creamy white beans. Check out my top tips for infusing TONS of flavor into this homemade vegetable soup recipe!

#1 Saute fresh vegetables

Saute chopped carrots, celery, onion and garlic in extra virgin olive oil until tender.

#2 Add more veggies,  beans, stock & seasonings

Bring the soup to a simmer then cook for 20 minutes or until the vegetables are tender.

#3 Add chopped kale

Saute until the kale is tender, 3-5 minutes.

#4 Season with  fresh lemon juice

Add a squeeze of fresh lemon juice to waken and brighten the vegetable soup.
