Superfood Salad with Lemon Vinaigrette combines ultra-healthy and flavorful ingredients like quinoa, pomegranate, citrus, avocado and beans, in a light-yet-filling meal, that’s bursting with satisfying flavors and textures. Eat by itself, or topped with shrimp or grilled chicken.

Gluten-Free Superfood Salad with Lemon Vinaigrette combines ultra-healthy and flavorful ingredients in a light-yet-filling meal.


  • 1/2 cup dry quinoa
  • 1/3 cup red onion, chopped
  • 1 orange, peeled then segmented
  • 1 avocado, chopped
  • 1 cup canned black beans, rinsed and drained
  • 1 cup pomegranate seeds (about 1 pomegranate worth)
  • 1 cup frozen corn, thawed
  • 1/3 cup chopped fresh cilantro
  • salt and pepper
  • For the Lemon Vinaigrette:
    • 1/4 cup fresh lemon juice (about 2 lemons worth)
    • 2 garlic cloves, microplaned or finely minced
    • 1 teaspoon agave nectar or honey
    • salt and pepper
    • 6 Tablespoons extra virgin olive oil


  1. Cook quinoa according to package directions then set aside to cool.
  2. For the Lemon Vinaigrette: combine all ingredients in a jar with a tight fitting lid or bowl then shake or whisk to combine.
  3. Combine cooled quinoa with red onion, orange segments, avocado, beans, pomegranate arils, corn, cilantro, salt and pepper in a large bowl. Pour Lemon Vinaigrette over salad then stir to combine. Serve cold or at room temperature.

    SO delicious and so many healthy, tasty ingredients! Even my hubby who normally prefers processed, Velveeta-style dishes, loved it and wants it again. Success!

    Since pomegranates aren’t available right now, I left those out. I will probably leave the out next time since it was so good without them and they are so much work to get all the seeds out.

    I’m SO glad I found this recipe via Pinterest. I made it for coworkers and it was a HIT! They said it was phenomenal. :) I bought and cooked up some frozen shrimp scampi so that people could top their salads with the shrimp. I separated the tons of butter scampi sauce that was leftover, and some of us even spooned a bit onto our salads. Also, I couldn’t find pomegranates at my Vons so I used pomegranate-infused dried cranberries. Thank you for this recipe!

    I made this yesterday, and it was so delicious – both last night and today for lunch. I thought I had quinoa in my cabinet, but didn’t so I substituted bulghur – 1 cup – and it worked out great! I will make this again.

    I made this for my family this evening with skewered shrimp to go with… What an AMAZING salad! To be honest, I wasn’t quite sure about the whole list of ingredients, so I tasted after each addition and to my very pleasant surprise, it just got better and better. Then, when I thought, “This is delicious, I shouldn’t add anything else,” I added the dressing and at that point I decided I will no longer question any of your recipe ingredients. I love it, my husband loves it, my kids love it. This is a definite repeat. THANK YOU!
    (I used honey to sweeten the dressing and white beans instead of black because that is what I had in my pantry.)

    I just made this — delicious! My only recommendation would be not to use the pomegranates. They add a crunchy texture that isn’t consistent with the rest of the dish. (Unless you could somehow get those seeds out of them ahead of time, but I”m not sure how you would do that…) Instead, I might try adding pomegranate juice to the dressing… I also used fresh corn, which I think is always better than frozen…

    I made this salad tonight and was EXTREMELY happy with the result…the dressing is really what makes the salad so light and fresh, I really think you could get creative with the ingredients and try some different options: I used half a chopped onion, fresh sliced cherry tomatoes, one can of mexi-corn (corn, black beans and small red pepper chopped), and chopped cilantro and basil from my garden. I think next time I’m going to add some chopped carrot and maybe a little purple cabbage! Delicious treat for summertime.

    I made this for lunch and it’s most definitely going into the lunch rotation! So delicious. I didn’t use the pomegranate, and instead of mixing all the dressing on top, I just spooned a tablespoon and mixed it in. The flavors of the salad are so outstanding that I didn’t want to cover them up in dressing!!
